Baked Tilapia and Fresh Spinach
Serve this easy and tasty baked tilapia dish with a rice pilaf or baked potatoes.
INGREDIENTS:
4 to 6 tilapia filets
cooking spray
8 to 12 ounces baby spinach, cleaned
1/4 cup chicken broth
1/4 teaspoon onion powder
salt and pepper
Creole seasoning blend
1 small tomato, chopped
4 green onions, thinly sliced
PREPARATION:
Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly.
Sprinkle spinach with salt and pepper and onion powder; add the chicken broth.
Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato and sliced green onion. Cover the baking dish with foil and bake at 350° for 25 minutes, or until fish flakes easily with a fork.
Serves 4.

Deep Fried Tilapia
Ingredients:
Tilapia Filets
Lemon Pepper Seasoning
Old bay seasoning
Canola Cooking Oil
Yellow Corn Meal (Self-rising)
1.) After fish filets are rinsed with cold water thoroughly, lie flat on a shallow baking/dish pan. 2.) Season filets on both sides by sprinkling Old Bay Seasoning first, followed by sprinkling Lemon Pepper Seasoning. 3.) Pour 1/2 cup of Yellow Corn Meal, per each two filets, into a ziplock bag and shake until filets are entirely covered. 4.) Cooking oil should be hot and tested to see if ready by sprinkling one or two drops of water to get a pop. 5.) Filets may then be put into skillet and fried evenly til both sides are golden brown.

Heat a little olive oil in a frying pan. Place the talapia in heated pan. Pour some ( about a tablespoon) balsamic vinegar over the fillets. Sprinkle with a little Italian seasoning. Turn after about 3-4 minutes and do the other side.

I like the tilapia seasoned with lemon, pepper and then slow cooked under the broiler until it flakes.....umm good

Pan fried in a little butter, olive oil, salt and pepper, lemon juice and that's it........Tilapa is such a delicate flavor, you don't want to lose that flavor by masking it........I have had tilapa and you couldn't tell what kind of fish it was, the flavor of the sauce was overpowering......so, even at home with tilapa, I just keep it simple.....and its so fast too!!! about 3 to 4 minutes a side on a medium high flame........Enjoy!!!

Maybe season it with garlic powder, salt & pepper , butter a pan, butter the fish and bake it.
