When I don't have cream, I substitute some milk and cream cheese.
Real Alfredo sauce is made with butter, cream, egg yolks, garlic, grated cheese, and sprinkled with fresh parsley, salt and pepper.
The cream cheese recipe is actually easier and doesn't tend to separate the way alfredo sauce does. My boyfriend always raves when I use cream cheese and Fettucini Alfredo is his favorite dinner!

Very quick and easy.
1/4 cup butter
1/4 cup grated parmesian cheese
2 cloves crushed garlic
1/2 cup heavy cream
1/2 cup milk
Heat heavy cream and milk in sauce pan over med-low heat stirring periodically so that it doesn't burn.
At the same time melt the butter in a different sauce pan and add the garlic and parmesian cheese.
When cream and milk start to boil, whisk in the butter mixture and stir constently until sauce thickens.
I usually turn the heat down to low once I add in the butter mixture. If the mixture is too thick you can add a little more liquid (either cream or milk) until you get the consistency you desire. If the sauce is too think, you can do the butter, parmesian, garlic step again and just add a little at a time until it thickens.
This is very quick and takes just a few ingredients. My family loves it. I keep heavy cream on had always to make cream sauces. Nice thing about heavy cream is that it doesn't go bad quickly. It usually has a long refridgeration life.

ALFREDO SAUCE
1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh
The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.
Cook your favorite pasta, I recommend spaghetti, if you want you may want to add chicken bacon any one of your favorite meats, I find it goes great with clams.
Pour desired amount over pasta, cook meat in sauce to absorb flavour into the meat, cook sea food in different pan and than add over pasta before pouring Alfredo Sauce.
If you find the original sauce using heavy cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

if you have whole milk, maybe. just whip it harder when the time comes to do that. you also need garlic, butter, asiago/parmesean grated cheese a little salt and some time, 'cuase you gotta keep stirring it or it'll burn real easy. heat up the milk, add the butter and garlic, then slowly add the cheese and garlic. when it gets thick enough to beat without making a mess, BEAT IT. i use a fork, most would use a stiff whisk or a beater with only one prong. keep uncovered but warm until ready to serve.

here's the quickest, the original and the best.
Soften 1 stick of butter to room temperature. Mix in 1/2 cup freshly grated parmsean until it melts into the butter. It will need to be room temperature, too.
Cook pasta.
Drain and rinse in hot water, shake most of the water out, toss the pasta with the butter mixture. Salt and I like freshly ground pepper with mine. To die for!!!!!
