Quesadillas (Mexican Grilled Cheese Sandwiches) that you can microwave and put just about anything on them that you like......Tortillas, Cheese and Salsa and nuke 'em.......
Hot Dogs in the microwave, nuke the dog first then the bun......maybe add a slice of cheese........
Ramen Noodles with some leftover meat in it, if you have, like leftover chicken.....
PB&J sandwiches, and you can add to them, like adding sliced bananas........
Bologna Sandwiches ( if you have it, or any other lunch meat that you might have in the fridge)
Canned soup, prepared in the microwave
Cereal with fresh fruit on top
Oatmeal with cinnamon and brown sugar made in the microwave (or any hot breakfast grain, Cream of Rice, Cream of Wheat, etc.....)
Prepared dinners, like frozen Lean Cuisine type foods.......
Microwaveable Pizza
Microwaveable French Bread Pizza
Jello/Fruit/Pudding Cups
None of the above require the use of the stove or a conventional oven, and I'm sure at 11 years old, you can use a microwave, just be careful and monitor whatever you're cooking whenever you're cooking......In a year or so, you should be ready to handle the stove and oven.......with some supervision, or you can start getting some ideas now by watching, say, like the Food Network, maybe Sandra Lee and see how she makes "Semi-Homemade Food" and go from there and good luck!!! Enjoy!!

Simple chicken quesadillas can be made without making a mess. All you need are some tortillas, pre-cooked chicken slices in packages, packaged shredded cheese and salsa.
Microwave the pre-cooked chicken to heat it up.
Heat a pan and spray with Pam or cooking spray and fry the tortilla for about 30 seconds on one side.
Flip the tortilla over and on one half of the tortilla put some cheese and then some chicken. Add a little salsa and a little more cheese.
Now fold the half of the tortilla that has nothing on it over onto the half that has the cheese and chicken and let the cheese melt a little before removing from the pan. The tortilla should be fried and the cheese should be melted.

Do you like rice krispy treats? They are very easy to make. I like to make individual ones in the microwave...
1. place 2 big marshmallows and a pat of butter in a microwavable bowl(do NOT use a metal bowl!)
2. microwave on high for about 10-20 seconds (until the marshmallows puff to be really big)
3. take the bowl out of the microwave and stir gently to combne the butter and marshmallow. pour in rice krispies (eyeball it) and stir until it is the right consistancy. spray a peice of foil w/ butter spray or lightly butter a peice of foil. spoon the mixture into the foil and gently flatten in out. put it in the refridgerator for a few minutes and enjoy!!!
*to make one with peanutbutter, put some peanut butter in the bowl with the marshmallows and butter before you microwave it
you could use other cereal for this too, like cocoa krispies or fruity pebbles, etc.
OR, you could just follow the directions on the back of the rice krispy box and make a big batch :)
there are tons of great recipes that you can make, search google for 'kids recipes' and you'll find tons of stuff

Actually as long as you follow the recipe, you can cook anything.
Me and my cousin were encouraged to cook from a young age and were baking cakes and pastries with minimal supervision.
Thinking back to what I did in school at your age we were expected to make scones, yule log, crispy cakes, swiss roll and pizza. at 13 we had to make Spag Bol, Curry, chilli con carni, cheesecake and pasta (from scratch).
I think the simplest meals would be Stew, Spag bol or macaroni cheese. all will be found a a good general cook book or online.
