These are cleaned throughly and preserved in salt until use.

Plastic is often used and removed after chilling or prior to cooking.

Most natural casings come from either sheep, hogs, or beef intestines.

Sheep casings are used for thinner sausages like breakfast links or hotdogs.

Hog casings are for thicker sausages like Italian or Polish.

Beef casings are for large sausages like salamis etc.

I've seen chicken in both sheep and hog casings.

Other animal intestines can be used, they're just not as common.
