Naturally eating a lot of carrot would increase the amount b-carotene in the eye. This is converted to the aldehyde form of vitamin A called retinaldehyde (or retinal for short). It becomes bound to a protein called opsin. This combined m olecule resides in the rods and cones, the photoreceptors of the retina which lines the back of the eye. When light strikes a photoreceptor, the retinaldehyde is converted from the -cis isomer form to the -trans form. This initiates a transient excitation of electrical energy which travels along the optic nerve. The electrical signal ultimately reaches the occipital cortex in the brain. The electrical information is processed into what we perceive as vision.

Have you ever heard of the pin-hole concept? It is used in the widely commercialized opaque glasses with little holes. It trains your eyes to focus and subsequent frequent usage will help improve your eyesight. My biology teacher herself tested out these 'miracle glasses' and by the end of 6 months, she was no longer dependent on her glasses (she said she watched 10 mins of TV daily through the miracle glasses).

I've seen those glasses being sold for a lot of money, so the cheaper alternative would be to take a pair of used glasses and paint them opaque, then drill little pinholes into the glass surface.

Since most vision defects are structural, glasses, contact lenses or laser surgery are the options. Eye exercises may help in a few cases where the deficient vision is caused by the eyes attempting to focus in different places.
