Why be limited to just to collards? Do you know that if you combine collard greens, turnip greens and mustard greens with a little salt pork, you have about the best there is! Trick is, once you've browned your salt pork and have added the greens and a little water, you need to balance the flavors with a dash of sugar. With greens, you are getting the best anti-oxidant there is, and you've added great fiber. Hope you enjoy them regularly, I sure do.

I love sweet cornbread but the only time I am forced to eat collard greens is New Year's Day.We have collard greens, blackeyed peas and cornbread. A southern tradition my husband grew up with. This meal will bring Good Luck and Financial Success for the coming year. LOL ( I am still waiting). The collard greens represent "Green Backs", the blackeyed peas are "Coins" and the cornbread is "Gold"

Now you're talking about good old-fashioned soul food. Thanksgiving and Christmas wouldn't be complete without collard greens and cornbread! Of course, I don't eat the greens, but seeing the traditional dish makes me get that fuzzy feeling!
