Take the ground beef (about 1 lb.) place in a bowl, add 2 eggs /raw. If you want to stretch the beef then you can add bread crumbs about 1/2 cup. If you want more beef, leave out. If you are going to put them into spagetti sauce then you would just season with salt 1/2 tea and pepper about the same 1/2 tea. Dice up a small onion (chop it fine). If you have parsley, 1/4 cup chopped is good. With clean hands you mix the mixture and form it into small 1 and 1/2 inch balls. If you want bigger 2 inches. Then you can fry them or bake them on a flat tray in the oven. Watch for grease splattering. If you are not going to use them in spagetti sauce, then you can add A1 sauce or barbeque, whatever flavoring you want it to have. Hickory smoke flavoring was a winner in homemade hambergers when I use to be a cook.

Actually the recipe starts with 1/3,1/3 and 1/3 of what ever combination of ground meat you want. It can be very lean beef, pork, and turkey if that is what you want - just so it is ground. Mix these with a mixer as you want the mix to stay as cool as possible. Add your seasonings
still using mixer [remember friction?] to mix them. Put in frig for awhile.Take what is called "chef scraps" cook them up and eat to check for seasoning. If satisfied make your meatballs. The best way to cook them is on a cookie sheet in the oven @ 350 degrees for 10-
15 minutes depending on size.

These are so addicting.
Waikiki Meatballs
1 1/2 lbs. ground beef
2/3 cup cracker crumbs
1/3 cup minced onion
1 egg
1 1/2 tsp. salt
1/4 tsp. ginger
1/4 cup milk
1 tbsp. shortening
2 tbsp. cornstarch
1/2 cup brown sugar, packed
1 can (13 1/2oz) pineapple tidbits, drained-reserve syrup
1/3 cup vinegar
1 tbsp soy sauce
1/3 cup chopped green pepper
Mix thoroughly beef, crumbs, onion, egg, salt, ginger, & milk. Shape mixture by rounded tablespoonfuls into balls.*Melt shortening in large skillet; brown and cook meatballs, remove balls; keep warm. Pour fat from skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add balls, pineapple and green pepper.
Note: I cook my meatballs on a cookie sheet for about a half hour. I then put them in a crockpot and pour the pineapple syrup mixture over the meatballs. Add the green pepper. Cook on low.
