I'm a teacher and I like to get gift cards to bookstores, or Amazon.com. I also like getting Yankee Candles and nice pen sets.
I personally hate getting dollar store items, and the cliche teacher/apple/chalk presents. I know some teachers like that sort of thing, but it shows that you only know that person as a teacher, and we have real lives outside of school. The best present I think I ever got was a collection of kitchen items (the little girl knew I liked to cook) that was presented in a large mixing bowl, with potholders, tea towels, mixing spoons, a candle that smelled like cookies, and a cute recepie card for oatmeal nut cookies. It wasn't much and I could tell the little girl picked it all out. Heartfelt, but personal.

I received the best scrap book of the school year from some of the parents of my class this past year. I had only taught them for the year and was touched with the amount of work they put into making the scrap book special. I'm sure you've got lots of pictures you could include if you made one, and you could get your children involved in the process. They could write narratives about their favorite moments, what they love about her, what they've learned that will remain with them forever, etc.
If you'd like to go for a more shopping friendly gift, a gift card to a local spa would really be nice, along with a gift basket filled with pampering items like bath oils and lotions. :)

If you have a picture of her with your children that would be wonderful (framed nicely of course) or if not with her one of the kids by them selves...Of course have each child write a nice thank you note. And then a gift card maybe to have a mani & pedi, or to get a massage, or something luxurious like that (or something from bath & body works or something)...It doesn't have to be outrageously expensive, just something to show you care about all the time and energy she has put into making your kids better humans
PS don't forget to write a lovely thank you note from you too!

Jewelry. Something sweet and nice, within your price range. Try the upscale department stores, most have sterling or gold plated items for not a lot of money. A necklace with a heart charm or pendant would be adorable from the kids.. Keep it simple, and if you wish, engrave the back with the kid's names. Consider something with her birthstone, faux or real.
Money is always good, especially combined with a token gift. Something to spend on herself, ssomething to remember the kids by. A piece of costume jewelry, a bottle of perfume, with a nice check.
A piece of crystal, something ornamental for her house, if you know her tastes.
Look around at that store at the mall, Things Remembered for ideas.

my friend is a teacher and gets gift cards to places such as Waldenbooks or Borders. She also receives gift cards to some of her favorite places, which she really enjoys. Maybe investigate and find out the teachers likes and surprise her with something to pamper herself or something she would really like.

I think a big RED ceramic apple "THANKS FOREVER" with the dates and names of your children . I don't know where to find such a thing but ceramic artists are in most communities.
Also a fat envelope of cash is a wonderful gift.
