Why is it that cooked chicken retains its heat much longer than cooked steak? I'm always burning my fingers on chicken and eating cold steak.

I am not so sure that is true. Have you done an experiment and followed the scientific method? Also, we generally eat chicken with our fingers but pick up bits of steak that we cut into smaller bits with a fork. Cutting the steak also helps cool it because it exposes more surface area.

I am sure that if you cut chicken into steak sized bites it would cool down as fast if not faster.

It's because chicken has a skin on it that holds in heat. This is only true if eating chicken cuts. A steak will cool off faster because there is no skin to hold in the heat. Just let a piece of chicken cool off for a while then enjoy.

The bones in the chicken will retain the heat longer.

You are very astute to notice that. It could have something to do with the chicken skin covering the meat of the chicken. Or it may be the thickness of the meat.
