Well first of all how old is she? Because even if you told little kids that they need to stop eating, they will just ignore you and keep doing that. But, if your cousin is a preteen or a teen you should just tell her. But, don't make it too direct because then she would get hurt.

Talk to her parents about it & see if she's taking any medicine. Her medicine might be the cause, but if she just likes to eat, then encourage her to eat more fruits & vegetables.

When you babysit her, take her somewhere that you all can be active, like swimming, the park, bike riding, etc.

when she goes for a snack give her a veggie or fruit and if she doesnt want it tell her thats all that she can eat then she will mostly likelt eat it.

instead of telling her to stop eating, give her healthier snacks like fruits. then take her on walks and play outside.
