Pellet guns are made for target practice not hunting. Even 1250 fps is not enough to penetrate deep enough to kill. Thank goodness for this or many more children would suffer early ends from gunshot wounds. This is the reason for the slower projectile velocity. A .22 caliber hornet has a MV of 2690 fps.

First you are hitting them in the most muscular portion of their body, second, 1250 FPS is fast but the pellet has very little kinetic energy when it contacts the target, last, the chest feathers are thickest on the chest, and much of the kinetic energy is lost trying to penetrate those feathers

You will have to hit them in the head with what you are using to deliver a killing shot*...22 caliber is more suited for your task*...
