Maybe I should have been more detailed. I need something for the thanksgiving, christmas holiday.. and I have to be able to produce enough for about 700 people a day.

What couldn't be simplier is to get to the grocery store and purchase ready made cheesecake filling, get mini graham cracker shells, fill with filling let set and top with canned pie cherry filling and a dollop of whipped cream. Or you can make your own mini cheesecakes using a vanilla wafer in the bottom of a muffin tin. The recipe for that follows:

1 (12 ounce) package vanilla wafers
2 (8 ounce) packages cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line tins paper liners.
Put one vanilla wafer in the bottom of each paper cup (or you can crush the vanilla wafers, and place 1-2 Tbsl of the crushed vanilla wafers into each paper cup. )
In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each muffin liner with this mixture, almost to the top.
Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling.
