Mango Ice cream

1 large ripe mango
3 yolks of eggs
1/2 cup sugar
1 pint milk
1 egg white
1/2 tespoon venilla

Scald the milk and pour over the beaten egg yolks and white mixed with the sugar. Return to the fire, stiring constantly for ten mimutes, taking care that the custard does not boil. Peel the mango, scrape or cut in small pieces and when custard is cold, mix it with the mango. Flavor with vanila and freeze...

For vanilla ice cream you will need:

▄ 100 g caster sugar
▄ 4 egg yolks
▄ 300 ml milk
▄ 300 ml double cream
▄ 2 vanilla pods
▄ 1 ice cream maker
▄ 1 heavy based pan
▄ 1 whisk
▄ 1 chopping board
▄ 1 knife
▄ 1 large bowl
▄ 1 Tupperware for storing

# HEALTHY PEACH ICE CREAM 2 egg yolks
# 1 (28 oz.) can peaches in syrup
# 2 Tbs sugar
# 1 1/2 cups low fat or skim milk
# 1/2 cup non-fat milk powder
# Fresh fruit, if desired

In a food processor/blender, process peaches and syrup to a smooth puree. In saucepan, beat egg yolks with sugar until thick and creamy. Scald milk. Stir in non-fat dried milk until dissolved. Pour milk over eggs, stirring continually until custard thickens. Remove from heat. Cool. Make about 1 Qt/.9L.
