There is always bread pudding and bananas foster and you can find a million recipes on line for those, but this pecan pie is my alltime favorite. It is not just a bunch of sugary goo in the middle like many recipes. It is flavorful and rich. And, having had pecan trees in our backyard growing up in New Orleans, the ingredients were easy to get!
Buttered Pecan Pie
¼ cup unsalted butter
½ cup light corn syrup
¾ cup heavy cream
1 teaspoon vanilla
1 cup light brown sugar, firmly packed
3 eggs
¼ teaspoon salt
1 ½ cups toasted pecans
9” pie shell
Preheat oven to 375. In a medium saucepan, heat butter over low heat until it turns golden-amber; do not burn. Immediately pour in cream to stop cooking and pour mixture into a mixing bowl. Blend in brown sugar, salt, corn syrup and vanilla. Beat in eggs by hand until well blended. Stir in pecans.
Pour into shell (crimp edges as high as possible) and cover edges with foil. Bake 30 minutes. Remove foil and bake an additional 15 to 20 minutes or until filling is set and pastry golden. Cool at least 2 hours before serving.
To toast pecans: spread pecans on cookie sheet and bake in 375 degree oven for 5-10 minutes, stirring every 2 minutes.

Peach Cobbler
1 stick (1/2 cup) butter
3/4 cup sugar
3/4 cup milk
1 teaspoon vanilla extract
1 cup self-rising flour
2 cups fresh sliced peaches
Melt butter in a shallow 2-quart baking dish. Mix together flour, sugar, vanilla, and milk to make a batter; pour over the hot melted butter. Do not stir. Arrange peaches evenly over the top.
Bake at 375 to 400° for about 40 to 50 minutes, or until top is nicely browned.

Spiced Peaches serves 10
INGREDIENTS
2 pounds firm ripe peaches
11 ounces white sugar
3 tablespoons and 1/2 teaspoon distilled white vinegar
1/3 cup and 1 tablespoon water
2-1/2 whole cloves
1 teaspoon crushed cinnamon stick
DIRECTIONS
Peel peaches and set aside. In a large pot over medium high heat, boil sugar, vinegar and water until the syrup is moderately thick.
Add cloves, cinnamon and peaches. Bring to boil stirring occasionally until the peaches can be pierced to the pit with a fork.
Fill sterilized canning jars with peaches. Continue boiling syrup until heavy and add to peaches to cover.
In a large stock pot, pour water half way to top with boiling water. Using a holder, carefully lower jars into pot. Leave a 2-inch space between jars. Add more boiling water to cover them, about 2 inches above the tops. Bring to a boil and cover, processing for 35 minutes. Remove jars from pot. Put jars on a wood or cloth surface, several inches apart and allow to cool. Jars will be sealed.

Old Fashioned Peach Cobbler
For the crust:
2 2/3 cups All-purpose flour
2 tablespoons Sugar
2 teaspoons Salt
12 tablespoonsChilled, unsalted butter, cut into pieces
4 tablespoonsVegetable shortening, cut into pieces
6 to 8 tablespoons Ice water
For the filling:
8 Cups fresh peaches,Sliced
2 Cups Sugar
1/4 Cup Flour
1/2 teaspoon Cinnamon
1/2 teaspoon Ground nutmeg
1/3 C up Butter
Mix flour, sugar and salt in large mixing bowl. Add butter and shortening. Using a pastry blender or 2 knives, cut butter and shortening into flour until mixture resembles coarse meal. Drizzle 6 tablespoons ice water over mixture. Kneed with your handss just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic; chill until dough is firm enough to roll out, about 30 minutes.
Roll out dough on lightly floured work surface as for a pie, but cut it into an 8-inch square and set aside. Save remaining dough and set it aside also.
Preheat oven to 475 F.
Combine the peaches, sugar, flour, cinnamon and nutmeg in a Dutch oven. Allow to sit until sugar is dissolved and a syrup forms. Over medium heat, bring the peach mixture to a boil, then reduce heat to low and cook until tender, about 10 minutes. Remove from heat and add butter; stir in melted butter.
Spoon half the peach mixture into a lightly buttered 8-inch square Pyrex dish. Cover with the pastry square. Bake for 12 to 14 minutes, or until lightly browned. Spoon the remaining peach mixture over the baked pastry.
Roll out the remaining pastry, and cut into strips about an inch wide. Arrange strips in a loose lattice weave over the peach mixture. Bake an additional 15 to 20 minutes or until browned.

Pecan Pie

3 large eggs
1 cup sugar
1/2 teaspoon salt
2 Tbsp melted butter
1 cup light corn syrup
1 1/4 cup pecans
1 tsp Vanilla
1 unbaked 9" pie shell
Preheat oven to 375º F, beat eggs, vanilla, sugar & salt. Add butter & syrup & mix in pecans. Bake 40-45 minutes in pie shell.
Eagle Brand Magic Lemon Pie
1 crumb or baked pastry 8 in. pie shell
1&1/3 cups (15 oz. can) Eagle Brand Sweetened Condensed Milk
1/2 cup lemon juice
1 teaspoon grated lemon rind or 1/4 teaspoon lemon extract
2 eggs, separated
1/4 teaspoon cream of tartar, if desired
4 tablespoons sugar
1. Put Eagle Brand Milk, lemon juice, lemon rind or extract, and egg yolks into mixing bowl; Stir until mixture thickens.
2. Pour into chilled crumb crust or cooled pastry shell.
3. Add cream of tartar to egg whites; beat until almost stiff enough to hold a peak. Add sugar gradually, beating until stiff and glossy but not dry. Pile lightly on pie filling.
4. Bake in slow oven (325 F.) until lightly browned (about 15 minutes). Cool.

go to your local super market, buy some angel food cups and a can of strawberry pie filling, and a container of cool-whip. you've got an instant strawberry short-cake.
