Well, one of my favorites is a mix green salad with some avocado and sautee shrimp on a garlic sauce.

Make these awesome chicken sandwiches (for 2-3 people):
Marinate two chicken breasts (cut into small cubes) in the following for half an hour:
- 2 tablespoons of honey
- 1 tablespoon of lemon
- salt and pepper to taste
- a handful of coriander leaves or parsley, chopped
While this is marinating, make the following salsa:
- 5-6 ripe tomatoes, diced
- half an onion, diced
- a handful of coriander leaves, chopped
- juice of one lemon or lime
- 1 small green chili, finely chopped
- salt and pepper to taste
- 2 cloves of garlic, crushed
When the chicken is done marinating, fry it in a non-stick frying pan without using any oil or butter. Put the chicken in a toasted roll, top with salsa and ketchup and mayonnaise and voila! A scrumptuous dinner is ready!

Well that depends on how many people will be dining and how much you like to cook! At our house we have 4 adults and 2 kids and the quicker dinner can be ready, the better. Here's a recipe for my meaty lasagna which is always a big hit around our homestead. Lasagna doesn't take that long to make if you use noodles that don't require pre-boiling (Barilla) - just layer and bake, but be sure to use a runny spaghetti sauce so that the pasta will soak up the extra moisture.
In a large saucepan, brown 1 pound of ground beef or Italian sausage with 1 cup of chopped onions and a tablespoon of chopped or crushed garlic. Drain the fat. Add a couple of jars of spaghetti sauce of your choice. Now add 1 tablespoon of vinegar, 1/4 to 1/3 cup sugar or Splenda and spices of your choice (Italian seasoning, Basil, etc.) and a pinch of salt. Optionally, add 1 cup of red wine. Bring these ingredients to a boil and then cover and simmer on low for about 20 minutes while you're making the cheese filling.
To make the cheese filling, combine the following in a large mixing bowl: 16 oz. tub of cottage cheese, 16 oz. tub of ricotta cheese, 2 cups shredded mozzarella cheese, 1 cup grated or shredded parmesan cheese, 3 eggs, and 1 tsp. coarse kosher salt. Mix well.
Cover the bottom of a 10 x 13 baking dish with sauce (mostly liquid - keep the meat chunks out of this layer). Put down a layer of lasagna noodles. Start layering the lasagna, alternating layers of cheese mixture and meaty sauce. Make sure the top layer of pasta is covered with sauce and then pile shredded cheese all over the top of the lasagna liberally. Bake at 350 for 45 minutes or so, or until the cheese on top is melted and bubbly.
This lasagna freezes well. Just freeze it in its original pan and put it in a 350 degree oven for about 60 minutes to reheat. Can't even tell it wasn't made fresh today! I like making this in advance and freezing 1 or 2 extra pans.
Variations: You can play around with the cheeses a lot - we love all kinds of shredded cheese. For the parmesan, we frequently substitute asiago, pecorino, romano... go with what you like! Add spinach to the cheese mixture to make this dish "florentine." You can hide almost any vegetable in the sauce by shredding, cubing or blending it. Try shredded carrots, peeled & cubed zucchini or add a jar of pimiento (roasted red peppers) to the sauce - they will cook down and add wonderful flavor.

*********CHICKEN BREAST WITH LEMON
4 boneless chicken breasts
Flour for coating
Salt and pepper
1 tbsp. oil
5 tbsp. butter
2 tbsp. lemon juice
3 tbsp. chicken broth or stock
3 tbsp. chopped parsley
Cut chicken breast into 2 slices (horizontally). Season flour with salt and pepper, then coat chicken. Heat oil and 3 tablespoons butter in large skillet. Add chicken and saute 5-6 minutes on each side or until tender (medium-low heat). Place on a warmed serving platter and keep hot. Add lemon juice and stock to pan juices. Bring to boil. Boil 1 minute. Add parsley and remaining 2 tablespoons butter. Stir until blended. Pour over chicken.
*******CUBE STEAK ITALIANO
1 lb. cube steak
1 onion
1 green pepper
2 tbsp. oil
1 c. spaghetti sauce
Slice cube steak into strips. Cut onion and pepper into strips. Saute all 3 in oil. Stir in spaghetti sauce and cover and simmer 10 minutes. Serve over egg noodles or rice.
Serve with a nice salad:
**********ITALIAN TORTELLINI SALAD
2 c. loose - pack frozen mixed broccoli, carrots & cauliflower
4 oz. mozzarella cheese
1 (2 1/4 oz.) can sliced pitted olives
4 c. torn salad greens
2 c. cooked, cheese tortellini
1 (3 1/2 oz.) pkg. sliced pepperoni
Italian dressing (optional)
Place frozen vegetables in colander. Run hot water over vegetables just until thawed. Drain well.
While vegetables are draining, cut cheese into 1/2 inch cubes. Drain olives. For salad, in large bowl combine drained vegetables, cheese cubes, olives, salad greens, tortellini (drained) and pepperoni. Toss lightly and add enough Italian dressing to coat. Makes 4 servings

One of my favorites to make for dinner is
Alfredo Mostaccioli
INGREDIENTS
1 (16 ounce) package mostaccioli
1 cup heavy cream
1/2 cup butter
1/2 cup grated Parmesan cheese
1 cup chopped fresh parsley
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Combine heavy cream and butter in a Dutch oven or large, heavy saucepan over medium heat. Heat until butter melts, stirring occasionally; be careful not to bring mixture to a boil. Stir in Parmesan cheese, parsley, salt, pepper and garlic powder. Toss with cooked pasta and serve immediately

italian meatloaf
INGREDIENTS
1 carrot, grated
1/2 onion, chopped
2 cloves garlic, minced
1/2 cup chopped fresh parsley
2 pounds ground beef
1/2 cup ketchup
2 eggs
1 1/2 cups fresh bread crumbs
1 cup tomato sauce
1 teaspoon white sugar
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium high heat, saute the carrot and onion for 2 minutes, or until onion is transparent. Add garlic and saute for 2 more minutes. Remove from heat and let cool.
In a large bowl, combine the parsley, beef, ketchup, 1/2 cup tomato sauce, bread and eggs, mixing well. Add the carrot/onion mixture and continue mixing, but do not over mix, as this will make the meatloaf dry. Transfer mixture to a 9x13 baking dish and form into a loaf.
Bake at 375 degrees F (190 degrees C) for 30 to 45 minutes.
While loaf is baking, heat the remaining tomato sauce and sugar in a medium saucepan over medium low heat. Pour over loaf when done.

INGREDIENTS
1 pound fresh green beans, washed and trimmed
1/2 cup water
1/4 cup Italian-style seasoned bread crumbs
1/4 cup olive oil
salt and pepper to taste
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 cup grated Parmesan cheese
DIRECTIONS
Combine green beans and 1/2 cup water in a medium pot. Cover, and bring to boil. Reduce heat to medium, and let beans cook for 10 minutes, or until tender. Drain well.
Place beans in a medium serving bowl, and mix in bread crumbs, olive oil, salt, pepper, garlic powder, oregano and basil. Toss mixture until the beans are coated. Sprinkle with Parmesan cheese, and serve.

Pretty much any type of noodles, mashed patatoes with gravy, homeade pizza, cesar salad with cold pasta, homade bread and soup, or you can make stew with dumplings. Yummy, good luck :)
