Wow that's a lot of questions. I'll tackle the dress ones first.
I'm a size 18 so I understand where you are coming from. Try on all styles of dresses, you may be surprised on what looks best on you. Don't rule anything out until you have tried it on. Go to David's Bridal. You can try the dresses on in your size there which does make a big difference. If you don't like any of the dresses at least you can narrow it down to a style. When they have to clip the dresses to your bra, or there is no way the sample will fit, you just can't get an idea of how it will look on you. It all depends on your shape and style. One size 20 woman will look totally different in a dress than another size 20 woman. It depends on height and how you carry your weight. For strapless bras try Lane Bryant or Avenue. I would get a long line bra (one that goes to your waist) they tend to stay in place better and cinch in the tummy a bit. I find regular strapless bras end up around my waist. Also, as for the skirts - a line is best. For slips I wouldn't go with all of the crinoline. I said my hips are big enough I don't need any more width! So I wore a simple satin slip.
11 am wedding ceremony - your reception wouldn't start till around 12 or 12:30. No matter what time it starts you usually have 1 hour cocktail hour and then a 4 hour reception. If you are serving a sit down dinner there is no need for a buffet too. You only have to serve them one meal.

I agree that an A-line or empire waist style looks best on larger girls. Once you choose your dress your seamstress should be able to assist you with finding the right bra.
They make long line corset style bras that work well with strapless and sleeveless formal dresses. The corset style also can be found with an attached slip. I am sure they have plus sizes of these items. I would not suggest a traditional strapless bra or the stick on kind becaus you want to feel secure all day.
As far as the reception, you only need to plan 1 meal, not 2. Your caterer can assist you with all those details, and your DJ will help with the reception schedule.
Usually the reception hall is reserve for 5 hours and would begin approximately a 1/2 hour to an hour after your wedding end time. Guests usually arrive before the wedding party. So an 11AM wedding depending on the type of service, the reception may start at 12 or 12:30 (location is also taken into consideration.)
Check with your hall to see how long they reserve the time, also check to make sure if there is a function booked after yours.

You should get a corset with a strapless bra attached. Also the gown you choose, should cinch in your waist, but maybe get a lace type overcoat which would be very flattering. Also the skirt part should not be too full, it should be A-line. Do a search: plus size wedding gowns. Also most wedding gown websites the sizes go up to 24 so you can have your choice. Check out netbride.com, theknot.com, wholesaleweddinggowns.com, brides.com, moncherie.com, morilee.com. If your ceremony is at 11:00 AM the reception should be at 1:30 PM to 4:30 PM. Beside your 3 course meals, have a cocktail hour which will start at 12:30 PM. and last 1 hour, and immediately the guests will go into another room for the dinner and reception.

The mentioned size 20 does not tell my much about your figure. But when you will wear a strapless you do not need a bra - it may be some disturbing for the eyes.
In a wedding at 11 am I think it will be best with some lunch for two - three hours, and no dinner at all.
The guests should leave about 2 am - so you have time to leave in due time - you should leave as the first, you have to prepare for the travel if you have planned it. Have a nice and lasting honeymoon!

empire waist will look good. Check out places like Lane Bryant for a supporting strapless bra for larger sizes. The reception will be until people leave. Afternoon ones tend to not last as long as evening ones with alcohol and dancing etc. You just need to provide lunch. If you are paying for a 3 course meal- you don't need to have a buffet meal. Pick one or the other. Buffet style is more casual and will be cheaper and people can get more food at any time- sit down is more formal and expensive. Depending on what planned activities is how to count how long it will last. Plan at least 1 hour for food /lunch. Are you planning on having a dj? Cutting the cake? Are you having wedding party dances? Dad/daughter dance? Boquet toss? all of those things add extra time. If you are having a more casual reception with basically just food- i would only plan on guests staying about 2- 2 1/2 hours. If you are planning on a more formal reception where you're having all the dances (dad/daughter, dollar dance etc) plan on more along the lines of 3 1/2 - 4 hours.

Your size isn't all that relevant, it's your shape that matters when determining what gowns look best. Also, you either wear a regular bra or a strapless, but not usually both. The only strapless bra that I have found that works is a Goddess brand longline. They have a couple of different types. If you're getting married at 11:00 am; you'll be having a lunch reception. It should last as long as you want but usually 4 or 5 hours. You don't need a buffet on top of lunch.

After an 11AM ceremony you should serve a breakfast or brunch to your guests. If you are having your reception in a hotel or banquet hall the normal reception time period is five hours which means it should end at 4PM. There is no need to serve another meal (dinner). There is NO need to serve a three course meal (lunch) in the morning. When a wedding occurs before 1PM is considered a "wedding breakfast."
If you are a size 20 then you need to look for a gown that accents your waist. The gown should not have alot of fills. I do not think you should wear a strapless dress but I do think a gown with a scoop (not real low) neckline will flater your figure. Try to find a dress that is "simple" and then dress it up with beautiful jewelry and shoes. The jewelry will make you and your dress sparkle . . and that's what you want!

your size 20 might be different than another person's size 20 so you really need to try dresses on and get advice from a trusted friend and the wedding dress salon. As far as the reception, if I were getting married at 11am, I would have a buffet lunch about an hour after the ceremony ends depending on how far the reception hall is from the church. Then do the reception type things, music, toss the boquet, etc and you're done by around 4. My relatives did this and it was very nice. who can afford 2 meals at their wedding?

If I were you I would try different dresses, see what looks good! You sound nervous, make sure to look in the mirror with a smile and remind yourself it's your wedding day! You're going to be happy!!!
Receptions usually arent that long. I'd say a big lunch is fine. I'm not sure if a buffet may be too much. What I would do is just have something like a huge fruit plate, not that huge just for snacking on. Put it somewhere where everyone can go grab a piece :)
How time goes, is really not something anyone can predict I suppose. It can depend on how far apart the meals are and such. Talk it over with your fiance and see what his opinion is.

One thing I noticed was that the bigger my skirt got, the smaller my waist looked! :-) I wouldn't encourage a HUGE skirt but it would be much better than the mermaid type skirt.
Strapless bras are great - they make strapless bras that are also corsets..a must for the bride, no matter what size!
You can have the reception as long as you want, but standard is usually 2 hours or so.
If you have are having a 3 course meal for everyone, I would only do that and not a buffet as well. Instead focus your expenses on the 3 course and make it fabulous.
