I live alone, so I only cook for one. I would welcome all quick ideas. The easier, the better. Thank you...

Quick is not the answer to cooking. Slow down and enjoy. Put your chicken in a slow cooking crock pot with chicken broth, a few onions and other veggies if you like, and cook it on medium for 2-3 hours or until it is cooked thru. A little pepper but no salt. The chicken broth has plenty of salt. Slow down and enjoy.

If you have a balcony get a Hibachi they make them with gas now so loads less smoke and much safer than coal then you can barbecue for just you or you and a guest. You could also just pan sear it with 1 tablespoon of oil or butter then cover it and lower the heat and cook for 8 minutes to finish cooking and from there you can use it in a salad, as is or cut up with mayo for a sandwich. There are loads of cook books that have recipes designed for cooking for 1 - go to the library and browse them - try a few recipes then once you find a good one buy it - it is always a good idea to have an easy to use cookbook on hand for inspiration. Ok I'm not sure if this is what you mean but the key point is, longer you lay it, the softer you'll get. So what I did was to put the breasts in a cup, use tomato sauce, olive oil, garlic and lemon. mix it up and make sure to do it well. Then close the cap and let it lay in the fridge at least 12 hrs. After 12 hrs, you can cook em in a pan with olive oil, softest you can get. Bonne apetite!

An easy way is to place the breast on foil, season it with your favourite herbs, mint, etc., or spices, pour over an amount of fresh orange juice and wrap up into a parcel. Place on a dish in oven at about 180 for about half hour and you have a lovely moist,flavoursomechicken breast. Also good for dieters and healthy.Meanwhile you could have put in about half hour before a previously scrubbed., pricked potato and have that with it plus your usual veg or salad. Enjoy.

if you first seasoned the chicken with salt and pepper then put it into a small roasting pan with a head of garlic cut crosswise, rosemary and 1 lemon cut in half then put melted butter on top of the chicken and roasted it at 350 until it was about 160 degrees inside that would be really good..i do it all the time and it always turns out well.

******************CHICKEN DINNER FOR SINGLE COOK
1 chicken breast
1 pkg. or can undiluted cream of mushroom soup
1/2 c. water
1 tbsp. lemon juice
2 tbsp. sliced mushrooms
Dash of salt
Dash of sage
Wrap chicken in heavy duty foil. Combine soup, water, juice and mushrooms, sage and salt. Pour over chicken in center of foil. Bring 4 corners of foil together and fold and bring under chicken. Bake at 375 degrees for 45 minutes. If more than one eating add more of everything.

I don't know what that means, in olive oil, at 325 degrees!
you can lightly coat it with oil, salt and pepper it, and bake it at 350degrees. you can fry it in olive oil, salt and pepper it, don't drown it in oil. There are many recipes!

put them in foil, cover with italian dressing, close the foil and you can cook them in the oven or i like to use the grill. i cant tell you a time frame, but i leave them on for about 20 mins, then check the middle to make sure theyre done

try cutting the chicken into bite sized pieces, coat in a little egg, then into some flavoured bread crumbs, then pan fry it up. tasty and quick.
