The two of you need to go talk to his parish priest. I know priests will do ceremonies in which one of the people isn't Catholic, but of another religion - I don't know what they do if you have no religion and aren't baptized, for example.
If it is allowed, you would have to both take premarital counselling through the church - you don't have to convert to be Catholic, but you MUST agree to raise the children in the Catholic faith, in a Catholic home.
I think more importantly, you and your guy have to talk about what type of life the two of you are planning together - will there be religion in your home, what are your shared morals/values, how do you foresee raising children, what will you do for religious holidays, etc.

I believe you have to have received all the sacraments to be married in the church, ie. Baptism, Reconciliation, Communion, and Confirmation. (I think that's all of them.) I'm pretty sure there are classes you can take through the church to get all these things done before the wedding, but you'd have to check with them to find out the details.
