Cucumber-Watercress Tea Sandwiches
Serving Size : 6

Tea sandwiches, like those you might find in a British-style teahouse, should be as petite and thin as possible. Loaves of thinly sliced sandwich bread, available at most grocery stores, are perfect for making these traditional teatime offerings.

32 thin slices peeled English (hothouse) cucumber
4 Tbs. (1/2 stick) unsalted butter, at room temperature
8 thin slices white sandwich bread
1/2 cup watercress leaves, plus more for garnish
1/2 cup radish, onion or sunflower
sprouts (optional)
Coarse salt, preferably fleur de sel

Using paper towels, pat the cut surfaces of the cucumber slices to remove any excess moisture. Lightly butter one side of each bread slice. Scatter the 1/2 cup watercress leaves evenly over all of the buttered bread slices. Layer the cucumber slices over the watercress leaves on 4 of the bread slices. Top the cucumber with some of the sprouts and a pinch of salt. Top with the remaining 4 bread slices, buttered side down.

Using a sharp knife, cut off the crusts from each sandwich and then slice the sandwiches in half, either straight down the middle or on the diagonal. If smaller portions are desired, cut each half in half again.

Arrange the sandwiches on separate plates of a tiered plate stand or on a cake stand or platter. Garnish each sandwich with a watercress leaf. Serve immediately.

Once you have buttered the bread of your choice.
Cut your cucumber but not to thin you want to be able to taste it after all.
Then add a little salad cream or mayo to one slice off the buttered bread.
Place your cucumber on top of the buttered slice.
Then salt your cucumber to bring out the taste.
Cut your sandwich.And enjoy

A good quality bread, some soft butter, peel the cucumber with alternate stripes, then slice thinly, soak in a little malt vinegar, then put on the bread, and cut each slice twice on the diagonal.

Cannot believe there is someone else out there that likes cucumber sandwiches. Don't know that this is perfect but this is how I make mine; black bread, cream cheese, long cut cucumber celery salt. (maybe add a little bah-choi)sp?lettuce.

I like them open faced, but you can add another piece of bread if you like. I would add more cucumbers and also put the dressing on both sides of the bread.

White or soft wheat bread
Mayo or creamy salad dressing
Layer of thinly sliced cucumbers
Sprinkle with lemon pepper (this makes all the difference)

try a tiny bit of horseradish in the butter skin cucumber cut crusts off bread serve with mustard cress

i dont use bread, i make mine into a little snack of saltines, miracle whip and then a slice of cucumber all topped with a sprinkling of seasoning salt. so fast and yummy for a quick snack.

Ingredients, one whole cucumber, one french baguette, butter and mayonnaise!!
Method, cut open baguette, spread bottom side with butter, put in whole cucumber, spread top side liberally with mayo, snap shut, precede too munch too yer hearts content!!!!
