Italian Chopped Salad in Shells
36 appetizers 3¼ hours 3 hours prep
1 (16 ounce) package jumbo pasta shells
4 cups chopped romaine lettuce
1/2 cup chopped fresh basil
1 cup coarsley chopped cooked chickens
1 cup coarsley chopped tomatoes
3/4 cup coarsley chopped cucumbers
3 ounces italian hard salami, chopped
1/3 cup roasted garlic vinaigrette dressing
Cook pasta shells as directed on the package.
Drain and cool.
Place remaining ingredients except vinaigrette in a medium bowl.
Pour vinaigrette over the salad, toss to coat.
Stuff the shells with the salad.
Cover and refrigerate 2 hours before serving.
And One More:
Spinach Salad with Honey Bacon Dressing
8-10 servings 40 min 30 min prep
8 cups torn fresh spinach
1 cup sliced fresh mushrooms
1/4 cup sliced green onions
1 medium tomato, seeded and chopped
1 hard-boiled egg, chopped
1/2 cup shredded parmesan cheese, shredded on large holes of grater
7 slices bacon, cooked and crumbled
1/2 cup honey
1/2 cup vinegar
1/3 cup vegetable oil
1 teaspoon yellow mustard or spicy brown mustard
1 teaspoon lemon juice
Combine first 6 ingredients with 5 of the cooked, crumbled bacon strips in a large bowl.
In a small bowl, whisk together the honey, vinegar, oil, mustard lemon juice and remaining 2 strips of cooked, crumbled bacon.
Pour over salad.
Serve immediately.

BOCCONCINI (MOZZARELLA) AND TOMATO
SALAD
This is a true Summertime salad because it is best made with garden-fresh, ripe ingredients. The riper the tomatoes, the better; and only fresh basil leaves will do. Use your best quality, dark green and fruity olive oil for this one.
Vinaigrette:
1/3 cup extra virgin olive oil
3-4 tablespoons balsamic vinegar
1 tablespoon fresh basil, chopped
1/2 teaspoon fresh oregano, or 1/4 teaspoon dry
1/4 teaspoon sea salt
pinch of red pepper flakes
3 garlic cloves, finely minced
Salad:
2 tablespoons pitted black oil cure olive, chopped
1/2 lb small mozzarella balls (Bocconcini)
5 ripe tomatoes, cut into 1" thick wedges
Allow the minced garlic to stand in the vinegar for 10-15 minutes before preparing recipe. This will help remove the "bite" from the garlic and mellow it.
Meanwhile, slice tomatoes into wedges. Drain mozzarella balls (they are normally packaged in a brine). Remove pits from black olives and coarsely chop. Set these ingredients aside in a salad bowl.
Combine vinaigrette ingredients in a cruet or in a blender with the garlic and vinegar from above. Use 4 tablespoons vinegar if you like a tangy salad (3 tablespoons if you don't). You can use all balsamic vinegar, or if you prefer a milder dressing, use half balsamic and half red wine or Chianti vinegar. No mincing or chopping is required if a blender is used - pulse briefly.
Pour vinaigrette over tomatoes, cheese and olives; stir to coat. Do not add too much dressing - just enough.
Can be served with peeled, sliced cucumbers (1/4" coins or 1/2" cubes), if desired.
Season to taste with freshly grated black pepper (and salt, if needed) and serve, optionally, on a bed of radicchio or escarole hearts.

CHICKEN AND BEAN SALAD
2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup Miracle Whip Salad Dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves
Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.
Toss with chicken mixture and serve over lettuce leaves.

I would buy a package of taco seasoning and a pound of ground beef, and follow the directions on the package for cooking it. Place a layer of romaine lettuce in a bowl, top with the seasoned beef, cheese, some drained chili beans, tomatoes, sour cream, and green onions. Serve with tortilla chips. This takes less than 30 minutes too :)

l like this one, raspberry (or any flavor you want) Jello. Chop into small pieces, apples celery, & walnuts, Use the quick set method on box, when partially set add ingredients and stir. Amount of ingredients used depends on how many boxes of Jello. l like this with a good amount so that it is crunchy to eat but also cool like jello. You can serve on lettuce leaves. almost like a Waldorf salad.

I love to make Paula Deen's "Georgia Cracker Salad" for get-togethers......It's so easy & yummy!
Take 1 sleeve saltine crackers & crush. Add 1 tomato finely chopped, 3 green onions finely chopped, 1 boiled egg finely chopped and 1 & 1/2 cups mayo. Stir together & serve immediately.....It's sure to be a hit!

Reduce the measurements if you just want one salad.
CRISPY COBB SALAD
1 qt. torn assorted greens
2 c. chopped turkey breast
2 tomatoes, chopped
2 hard-cooked eggs, chopped
1 avocado, peeled, seeded, chopped
6 slices bacon, cooked, crumbled
1/4 c. blue cheese crumbles (optional)
1 (8 oz.) bottle Ranch dressing
Arrange greens, turkey, tomatoes, eggs, avocado and bacon in rows on large serving platter. Serve with dressing. Sprinkle with blue cheese.
