I think just one interview. They may however give a trade test i.e. to find out whether you really know the job. Show your people skills when you are being interviewed.

There is no real number of interviews until you get your job. Just keep going to them. Let the restaurants know how much you want to be a waitress. Many restaurants hire people to work as bussers first, then move up to the waitstaff position later. If you are willing to do that, you may get a job faster. We all have to work our way up from the bottom. Be patient, enthusiastic, and willing to work hard.

I think 1 should do, as long as you perform well and shows a postive attitude. Usually, they will contact you within 1 week or few days, depending how busy the restaurant is. If they are in short of manpower, I think the next day you will be a waitress. If they never contact you after waiting for more than a month, I think you are not shortlisted
