Jesus addressed Mary by the term woman. In Hebrew the word used by Jesus was a term which would be addressed to a queen or a woman of high rank. It was a term of great respect.

Jesus was addressing his mother as the new Eve. In the book of Genesis Eve is referred to as the 'woman'.

Genesis 2,23
the man said: "This one, at last, is bone of my bones and flesh of my flesh; This one shall be called 'woman,' for out of 'her man' this one has been taken."

Finally, at the foot of the cross Jesus firmly establishes Mary as the new Eve by alluding to her the title of Mother of Man. "When Jesus saw his mother and the disciple there whom he loved, he said to his mother, "Woman, behold, your son."
Then he said to the disciple, "Behold, your mother." And from that hour the disciple took her into his home. - John 19, 26-27.
