why is that such a southern dish???

I live in the south.... I dont think it is just a southern thing! Your right, we can cook! I think food in general is our specialty cause, people get together in the south and socialize over meals. We put our love in our cooking and share it with others!

Living in the south all of my adult life I never knew it was more popular here. I don't know if as a group we just eat it less than we used to because of health reasons, but I don't see it as often. I love it, but only fix it once a year as a holiday treat.

To the person who answered it was because it was cheap and the south is the poorest, please become better educated and don't make general remarks. Perhaps you just don't know geography. Plus when I make it with 4 kinds of good cheeses, it is not cheap.

FYI, to the above "answerer" - unfortunately we have poor everywhere in this country.

Europeans also make macaroni/pasta and cheese. Ours tend to be a little more elaborate and we tend to use Swiss cheese and heavy cream along with a little nutmeg. I was born and raised in Europe and I love both kind, I also love grits especially with sausage gravy. You are right, southerners sure can cook and I was raised with french type cuisine.

I grew up in the north but have lived in the deep south for a long time, we had mac and cheese as kids alot which my mom said came from depression time because it was cheap to make. Down here forget the pasta, every things rice, rice, rice!

Ahh, southern cooking. When I was a truck driver I gained a couple pounds every time I spent time in the south. LOL

Probably because the best macaroni & cheese is built below the Mason-Dixon Line...creamy, cheesy, crunchy bits on the top.... However, this is totally offset by something called Rotel Dip, which includes Velveeta--the Spackle of the South.

Everybody like mac and cheese. And since the south is the poorest part of the country, it is very economical.
