CUCUMBER SANDWICHES
1 lg. cucumber, cleaned but not peeled
8 oz. cream cheese, softened
3 green onions, chopped
Mayonnaise as needed
Celery salt
Garlic powder
Paprika, if desired
Sandwich bread, white or other
Shred the cucumber and allow to drain over a paper towel until most of the liquid is gone. Mix the cream cheese and mayonnaise until smooth and spreadable. Stir in chopped onions and add garlic powder and celery salt as desired. Add drained cucumber, stir.
May be spread on open faced sandwiches and topped with paprika or other garnishes or served between slices of sandwich bread cut into small, crust less decorative shapes.

This is an old recipe!
1 large cucumber
3 Tablespoons vinegar
1 Tablespoon lemon juice
1 Tablespoon sugar
1/4 teaspoon salt
dash of pepper
1 teaspoon grated onion
12 ounces cream cheese
Peel cucumber. remove seeds. Grate corsely. Soak in vinegar, lemon juice, sugar, salt and pepper for 15 minutes. Drain. Blend onion with softened cream cheese and stir in well drained cucumer. Mix well and spread on sliced bread. Place a top piece and cut in either 3 rectangles or 4 triangles.
I find when making finger sandwiches purchasing a pullman loaf or a sandwich bread is best. These have a square shape to each slice so there is less waste. I also use an electric knife to trim the crusts off the bread doing about 6 slices at a time in a stack. The serrated edge of the knife and the motion keeps the bread from being smooshed!

Cucumber sandwiches are very traditional for afternoon tea, and not hard to make at all. The white wine vinegar adds a bit of zing to the cool cucumber slices.
INGREDIENTS:
1 English cucumber
White wine vinegar
Butter, soft
PREPARATION:
Peel and slice the cucumber. You can use a regular cucumber, but the long English ones have fewer seeds. Drizzle the cucumber slices with wine vinegar and let sit in a shallow dish for 1/2 hour. Drain them of any excess vinegar, and pat dry with a paper towel.
Make sandwiches with 1 or 2 layers of cucumber slices, on thin bread with a light spread of butter.Slice sandwiches diagonally into quarters and serve with afternoon tea.

Perfect for afternoon tea!
1 package (3 ounces) cream cheese, softened
1/2 teaspoon of garlic salt
1/2 teaspoon of dill weed
1 teaspoon chopped chives
8 slices of white bread
1 seedless cucumber
Combine the cream cheese, garlic salt, chives and dill in a bowl. Mix well. Cover and chill 1 hour.
Cut the cucumber into rounds. Set aside.
Using a biscuit cutter or the top of a glass, cut the middle out of each slice of bread. Top each slice with some of the cream cheese mixture, then a slice of cucumber. Cover and refrigerate until ready to serve.
Garnish with additional dill and chopped chives.
Roni's cucumber sandwiches
cream cheese, mayo and dry Italian dressing
8oz cream cheese
1/2 c. mayo
1 pkg. dry Italian salad dressing(1pkg. makes 8oz. dressing)
3-4 medium size cucumbers
1 loaf bread your choice
Cream mayo and cheese together. Mix in salad dressing. Peel and dice cucumber and add to mixture. Optional to leave crust on bread. Spread mixture on bread and cut in halves or fourths.
Preparation Time: 30 min Serves: 15
