I have boneless chicken breast, onion, zucchini and eggplant what should I create?

I think I'd toss all that w/ some cooked pasta and olive oil and garlic.

I'd bake the chicken breast and make oven roasted vegetables with the rest. Cut the onion in small wedges, slice the zucchini in thick slices and cut the eggplant in slices then quarter the slices. Sprinkle with olive oil and some seasoning (I usually use a veggie seasoning and some minced garlic) and roast in a 400 degree oven, stirring every 15 minutes.

HAWAIIAN BONELESS CHICKEN BREAST

4-6 Boneless Chicken Breasts
1/2 c. unsweetened pineapple juice
1/4 c. vegetable oil
1 tbsp. brown sugar
1 tsp. garlic powder
2 tsp. dry mustard
2 tsp. ground ginger
1/4 tsp. ground pepper

Combine in saucepan all ingredients except chicken. Bring to a boil, reduce heat, and simmer 5 minutes. Let cool, pour over chicken which has been placed in a shallow dish. Cover and refrigerate for 1 hour or more, remove chicken from sauce, cook on grill about 20 minutes. Baste while cooking.

Make a casserole with pasta, & tomato sauce.
Or any other cream sauce, like mushroom soup.
You could brown the chicken slightly with onion.
Boil the pasta (any shapes) until al dente.
Chicken can be cut in strips to go farther.
Zucchini & eggplant will soak up all the flavours.
Add garlic & any spices you like: oregano, basil, thyme, etc.
Bake casserole dish in oven at 350F for 1 hour.

stir fry, just combine the ingredients, that is what i do, but i dont like zucchini or egg plant. just onions and chicken. try to whip up a sauce, or you can put wine in it, and garlic. just cook the chicken, add the wine or a broth like chicken broth or beef, than scrap the fat bits on the pan, than add wine let it reduce and than add onions and salt and cream
