When our cat wants something he will often rub up agianst us, and he will also roll over on his back and look up at us. It melts our heart every time. Does he know what he is doing when he does this?

They know what works! In a case like your's, he may not consider it as cuteness, but he knows it'll get him what he wants. That is NOT to say, however, that he doesn't know he's cute.
While some vets and "experts" might try to claim that vanity is beyond the realm of a cat-though how they could if they've ever MET a cat is beyond me, I have a (male) cat who is more vain than any person I've ever known. We'll catch him sitting on things with his mane all fluffed out and his tail curled around like he's sitting for a portrait before he knew anyone was even looking at him. If you mess up one hair on his body, he'll spend an hour licking himself to make things right again. Our other cat, though beautiful and knows it, isn't quite that self-absorbed.

Yes definitely! my cat Dante does that kind of thing all of the time and if we tell him how adorable he is, he'll do even more cute stuff ie playing with his feather, going to get a toy and throwing in the air etc.

YES! My cat absolutly knows he's cute! Jack does the same thing! He rubs against my leg or nudges my hand to get attention, and to put his scent on me. He makes sure I don't forget how much my life depends on him being there!

NO. There is no thought process with an animal, just instinct.
