I think the Chinese, Russians, and Afghans would win... you really can't argue with the Chinese because they are SO big and developing SO fast. Plus Russia is notoriously hard to beat, and if they still have nukes they would probably strike before the Britons and Germans did. I don't really see Afghanistan getting in on it, but they have pretty tough terrain, and very dedicated people if they've got the Taliban fighting for them.
I don't think that the UK/Germany pairing would work, and not because there are still some WWII tensions there either. The UK is an island, and thus has a limited amount of resources available to them. Remember WWII, where they got cut off and almost completely screwed? And while it is true that Germany is a manufacturing and engineering powerhouse, they have nothing compared with China. Plus both countries have a far smaller population and land mass than their opponents, and thus are at a big disadvantage.
And I don't know that Germany would necessarily enter the war. They're pretty peaceful now (no Iraq), and have gotten screwed over in both previous world wars (not that their motives were right) so I doubt they'd enter a third.
Plus, how are you going to keep the US out of this mess? We stick our noses into anything, and most certainly would get involved in anything against Afghanistan or Russia, and probably China too. And we'd probably fight with the UK since we are allies. Even with the addition of the US, I think the China team would win. The war would go longer and be far more devastating if the US joined, and maybe "our side" would be a little closer to "victory" but you just *can't* argue with China.

Nukes would get involved if either side started to lose...so everybody loses. I know you wanted some long drawn out analysis, but that's the truth of the matter. Nuclear powers can either have small wars like India and Pakistan, or they can annihilate each other. No middle ground.
