Can't say which was best - but virtually everything I ate while in Borneo. Open air restaurants - pick your own fish/stingray/frog/whatever you fancied - cooked how you wanted - fried/boiled/barbecued. The spices there are fantastic. Changed the way I thought about food.

If you are more of a carnivore - African style great meats cooked slowly. Finished off with pancake ice cream and banana.

Living in Costa Rica now where all the food is tasty if a little bland - but fresh, fresh, fresh. Friuts so sweet and tasty ripened in the sun as nature intended. Vegetables so versatile. Cooking has become more fun.

Costa Ricas national dish - chicken and rice with loads of cilantro.

Ready to eat now.

Pura vida

It was in Puerto Rico, both times. A restaurant called Regina de Espana I had a Filet Mignon with a prune sauce, Hearts of Palm salad (which was a hot salad) some green beans, other stuff but these things I remember and it was the best that was like 15 years ago and I still remember it. The other time was just in February of this year at a neighborhood type restaurant name Edith's I ate there more times in 10 days then I care to admit. Breakfast, Lunch, Dinner, Snacks LOL whenever. They had pork chops, beans and rice, steaks, everything. And this garlic sauce (mojito) which was too much. I usually like Itailian food tho.

this was at khoury's restaurant in south Miami (near the university of Miami).

we opened with a Lebanese beer, almaza. it was light and crispy with a slightly flowery aroma.

then the sampler:
Baba Ghanouj was delicious, slightly smokey with the right amount of garlic and left somewhat chunky.

the hummus was luxurious on the tongue with good quality olive oil and very carefully blended chickpeas, the texture was velvety and the fresh sweet tomatoes on top were a treat.

the sampler also included stuffed grape leaves (not at all bitter or vinegary) and a kibbeh with ground lamb with a mouthwatering coriander/Cinnamon gravy (lighter than a gravy but it coated the meat) inside and i'm STILL trying to replicate.

as a main course i had the roasted lamb, which was a marriage of smokey, mild spice and earthy flavors (like clove and saffron?) and sweet flavors like raisins. it was served with rice and almonds. the soft, lightly flavored rice balanced the complexity of the well seasoned lamb, and the almonds provided a crunch and toasty flavor that played well with the dish over all.

the desert just took my breath away. it was a kind of white yogurt served with orange blossom water and honey. MAN, one bite of this and you'll be amazed. the yogurt is a little thicker than what Americans eat and the honey is a nice contrast in texture. but the orange blossom water--its thin as air, but so aromatic, the flavor literally unfurls on your tongue, it feels like a flower blooming in your mouth. its the most amazing thing to have such a sensational FLAVOR on your palate and no texture to associate it with, as it was an additive and not actually in the yogurt.

I'll never forget that first meal at khoury's. every time I'm in the area i stop in for a snack or take away, but that first exploration of Lebanese food will always stay with me. it was exactly what trying new food should be like.

Ooh, half a fresh pineapple with the filling scooped out and then mixed with fresh strawberries and grapes before being put back and covered with fresh prawn cocktail, OK so it's very passe now but I loved it, then we had veal with rosti potatoes, ratatouille, garlic mushrooms, and a carrot /swede mash served with baby onions in a white sauce and gravy, and for afters a ginger biscuit based cheesecake with a tangy lime filling and a crunchy dark chocolate topping. Yummy, and I make the same cheesecake regularly for my family. If I remember rightly we had the meal at a place called the 3 Fishes at Stretton in Nottinghamshire. Cor, I'm bloomin' ravenous now! lol:)-

My mams' rice concoction, It's a bit like a kedgeree but with meat instead of fish.
First you'll need the biggest pan you've got.
Take some left over meat, cube it,
chop & fry some onions in the pan,
make up some gravy or meat stock,
chuck the uncooked rice into pan & pore in the gravy/stock,
lob in some veg: peas, sweet corn, chopped carrots & cellery.
Make sure it dosn't boil dry, keep it topped up with water un till rice cooked, in the last minuet pour in a capfull of peach shnapps, it adds a glorious extra dimention thats hard to explain.
Serve, eat, enjoy, loosen belt a notch, groan 'cos you'r too full to move. ;-) gorgious.

Not the most glamorous but one of the most delicious meals I ever had was a fresh seafood pizza in a bar/restaurant in Barcelona. I want to go back just to have another!

Quite a simple one - sat by the harbour in Esaouira in Morocco, had fresh Dover Sole caught that day - grilled by the harbour and served with fresh bread and olive oil. Fantastic.
Had gut rot for the next two days - but still.....very tasty.
