Fry them up like you would a crappie. They are very good. Here is a recipe I use. The honey in the egg yolk mixture helps the coating to stick to the fish. An exellent recipe that works with any pan fish.

Honey Fried Pan Fish
1 egg
I teaspoon honey
1 cup crushed saltine crackers
1/3 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 and 1/2 pound of pan fish fillets, best to remove skin
vegetable oil
lemon slices
additional honey to drizzle on if desired

In a shallow bowl, beat egg and honey. In another bowl combine crackers crumbs, flour, salt and pepper. Dip fillets into egg mixture, and then coat with crumb mixture, fry over med. high heat about 3 minutes each side or until fish flakes. Drizzle with additional honey if desired and garnish with lemon slices. Some tips- preheat oil till pretty hot and it sizzles when fish are put in and I also make a bit extra of both mixtures tio ensure I have plenty to coat all the fish. I coat them all and put on a plate and fry in intervals. I hope this helps, I wish I had a mess of them, sounds so good right now! They are just as good as a crappie or a walleye. We have them alot up here in Minnesota. My dad is a pro at filleting and skinning them.

they are the best. I mainly just fish just for bluegill. You need to catch a few more to make a mess but the taste is the best. Spring, fall and winter are best for the tastiest.
We fillet and then bread ours and then deep fry. You can just scale and gut them and fork the meat off too.
I do other fishing too just to set the record straight from shark, flounder, cobia, catfish, walleye, perch, bass, and what ever gets the hankering to take the bait but when ti comes to eating bluegill is at the top. I don't turn down a mess of perch either though.

bluegills are outstanding as a food fish. As a matter of fact they are one of the few fish i wont let go (catch and release is very important) If i catch some decent sized ones. Now if you want my opinion, scaling, gutting, and frying these fish whole is not my favorite due to having to pick through bones. I fillet them and use "shore lunch" brand seasonings in a beer batter. the directions are on the box and you can get different varieies to match what you like. Just deep fry them in vegtable oil. These fish are incredibly tasty. If you catch a stringer full of good sized ones, have yourself a fish fry with them. You wont regret it.

The only way to eat this fish is to fry them whole or filet them if they are large enough. The trick to great "bream" as sunfish such as bluefill are called in MS is to mix the flour with what is called "hot meal." It is seasoned corn meal such as "southern star fish fry" cornmeal mix. For spicier fish, use a larger proportion of the hotmeal than flour. Avoid using only the seasoned corn meal without mixing it with flours. If done properly, even the fish fins can be a crunchy treat.

I incredibly have a 10 inch male sunfish in my seventy 5 gallon. he's thru himself and the tnak is working with 2 canister filters. They dont often tolerate different fishes contained in the tank, i had to go him from my super mouth bass, because of the fact the sunfish exchange into too aggressive. they gets incredibly super and choose a super tank. like mines, with impressive filteration.

Deep fried is good. Filet the fish. I use Italian style bread crumbs. Another way to cook and eat sunfish and other panfish like yellow perch is to filet them, poach the filets until firm, then put them on ice and dip them in coctail sauce like you would a shrimp coctail. Very good that way too.

They have to be one of the best fried. Simply flour them and fry them lightly in oil, peel the backbone out, look for bones and just a little salt.

You don't need a Betty Crocker cook book to fry them.
