CLASSIC RED RICE
INGREDIENTS:
* 1 small onion, minced
* 1/4 cup butter
* 2 tablespoons fresh herbs, mixed, thyme, basil,, marjoram, etc.
* 1/2 salt
* 1/2 tsp black pepper
* 1/4 cup tomato paste, Italian-style
* 1 cup long-grain rice
* 1 1/2 cups boiling chicken broth
PREPARATION:
Saute onion in butter until softened; add seasonings, tomato paste, rice and boiling water or broth. Bring to a boil, stir once, cover, reduce heat, and simmer 15 to 20 minutes, until tender. Fluff with a fork and let sit 5 minutes.
