-----------------Gluten Free Pizza Crust Mix From Barry Farm Foods

DIRECTIONS:

Preheat oven to 425º

Ingredients required:
2/3 c. warm milk
1 t. olive oil
1 t apple cider vinegar
1/8 c corn meal

Pour mix into large bowl and stir in yeast packet (included) . In second bowl mix together milk, olive oil, vinegar. Add wet to flour mix and beat 3 min.

Oil 12" pizza pan (for thin crust) or baking sheet (for thick crust) and sprinkle generously with corn meal.

Sprinkle dough with corn meal and press it onto pan with your hands , adding more cornmeal as needed to prevent sticking to your hands.

Make edges thicker to contain topping.

Bake 10 min. Remove and add toppings. Bake for another 18-20 min til top is nicely browned.

------------------Gluten-Free Pizza Crust

1 tablespoon dry yeast
2/3 cup brown rice flour or gram flour or fava bean flour (I use 'garfava' flour which is a blend)
1/2 cup tapioca flour
2 tablespoons powdered milk or non-dairy powdered coffee creamer (Dairy alternative, 2 T tapioca flour or sweet rice flour in place of 2 T dry milk powder or non-dair)
2 teaspoons xanthan gum
1/2 teaspoon salt
1 teaspoon unflavored gelatin
1 teaspoon italian seasoning
2/3 cup water (110 degrees F)
1/2 teaspoon sugar or honey
1 teaspoon olive oil
1 teaspoon cider vinegar



1. Preheat oven to 425 degrees F.
2. In medium bowl using regular beaters (not dough hooks), blend all ingredients on low speed.
3. Beat on high speed for 3 minutes.
4. (If mixer bounces around bowl, dough is too stiff. Add water if necessary, one tablespoon at a time, until dough does not resist beaters.) Dough will resemble soft bread dough.
5. Put mixture on lightly greased 12-inch pizza pan or 11 x 7-inch pan (for deep dish version).
6. Liberally sprinkle rice flour on dough, then press dough into pan, continuing to sprinkle with flour to prevent sticking to hands.
7. Make edges slightly thicker to hold toppings.
8. Bake pizza crust for 10 minutes.
9. Remove from oven.
10. Spread pizza crust with your favorite sauce and toppings.
11. Bake another 20 to 25 minutes or until top is nicely browned.

Obviously if you had plans to go to the grocery store you could buy yeast so going to buy a pre-made pizza crust is a bad idea. You cannot make a crust with out yeast. Baking powder and soda are not a part of pizza crust dough. You can use other things as a crust sub though: Bread Rice cakes torillas english muffins bagels and so on....

Pillsbury has a pretty decent pizza crust dough in the can. All you do is unroll it and press into a cookie sheet. We use it at home often. Get your favorite pizza sauce and toppings and you can have pizza in about 40 mins. for a crispier crust they recommend prebaking for 8 mins. add toppings then bake again to finish.

For a quick Pizza you can use a tortilla. Put the sauce and mozzarella on and bake in the oven at 325 degrees for about 5 minutes.

Just buy the Pillsbury's "Roll Dough Mix"; there are directions on the back to make a nice thick and chewy crust. I just spread it on a small cookie sheet; let it rise for 20 minutes. I make my Taco Pizza this way. It turns out fantastic!!!

LOW CARB PIZZA CRUST

2 cups soy flour
4 eggs
1 cup heavy cream
1/2 cup seltzer water
1 1/2 tsp salt

Preheat oven to 375F degrees.
Beat eggs until yolks and whites are combined. Pour in cream and seltzer water. Add salt and stir in soy flour.

Mixture will be slightly liquid.

Butter 3 individual size pizza pans (about 9" or you can also use pie plates) generously. Spread batter thinly on pans.

Bake until slightly browned and cooked through.

Spread your favorite low carb toppings (cheese, mushrooms, etc).

Get a piece of bread, put it in the toaster. Take it out, put some cheese in the microwave and melt it. Then put some spaghetti sauce on the stove and heat it up. When the cheese is melted and the sauce is hot, spread some sauce on there and put some melted cheese on it. There you have it a delicious pizza. I can make one with meat lovers, veggie lovers, and extra cheese. I call it "French Pizza" like french toast only better.

i just use prepackaged pizza dough powder and add some water ....
it rises on its own
