------------------------How to Roast Peppers
Step One
Select a heat source. Peppers are best roasted over a live fire, such as a gas burner or a charcoal or gas grill. Lacking those, you can use a broiler.

Step Two
Turn the heat to High (or turn on the broiler).

Step Three
If using a broiler, cut the pepper in half and remove the stem, veins, and seeds. Place the pepper on a broiler pan.

Step Four
Coat the pepper lightly with oil.

Step Five
Broil for 5 to 7 minutes, or, using metal tongs, place the flesh of the pepper directly in the flame of the burner or as close to the heat source as possible.

Step Six
Rotate the pepper as the flesh closest to the heat blackens and blisters.

Step Seven
Remove the pepper when it has blackened completely.

Step Eight
Place it in a bowl and cover to allow it to steam (or put the peppers in a paper bag and close it).

After 15 to 20 minutes, scrape off and discard the blackened skin.

Remove and discard the seed pod, stem and inner ribs before using.

* When one part of the skin has blistered and turned black, try to keep it away from the heat while you blacken the rest of the pepper.
* The pepper should be very black. In fact, it will look burned, but if done properly and quickly, only the outer skin will blacken, and the flesh of the pepper will remain its natural color.
* To preserve as much of the smokiness and roasted flavor, try to scrape the skin off and discard it without rinsing the pepper in the sink.
* Roasted peppers can be eaten as antipasto, pureed into a sauce, or used almost anywhere fresh peppers are called for.
* If roasting peppers indoors, make sure your kitchen is well ventilated.
* Don't hold metal tongs in the heat for very long. They can heat up and possibly burn you.

If you have a gas range or a grill, this is what to do... Place the whole pepper RIGHT on the burner (or grill top). Let the fire burn them as you flip them until they are black (yes totally black) all over. This is just the skin burning.
Then, put them while they're still piping hot into a zip log baggie. (for about 15 minutes) They will steam up the bag, and if you just rub them around in the bag with your hands, the skin will fall right off.
Then you remove from the bag, wipe off that burnt black skin, and you can cut them open, remove the seeds and slice or preserve however you want.

I run a BBQ skewer through the whole pepper, then crank up the gas burner to high. I just set the pepper right on the burner, turning occasionally (with a potholder) until the skin is blistered and totally black. Then I pop it into a paper bag and seal it to let it steam. After it cools down the black skin slips right off. Then you can cut and seed it.

Very easy
You can actually roast them.
you can ppull out the seeds and just roast it at 350 for an hour or so.
You could slice them up and roast at 350 with a little oil
Faster yte, you can cook them right on the burner. Just roatate them around. When done, put in a plastic bag. They will steam for a minute, than you can pel the burnt skin off.

Easy !! do not cut peppers 1st place peppers in hot oven or on hot grill and roast about 15 min turning a few time ,peel outer skin off then you can cut them.sometimes i cut them if i use my george foreman grill and just grill them and it works fine for a quick way ,put some thick onions on it too they taste real good.

Cut out the center and scrape out the seeds etc, then put in a oven proof dish brush with a little bit of oil (olive or sunflower depending on availability/preference) then place in a hot oven, after 10/15 minutes check on them, they should be done. don't overcook them as burnt peppers aren't nice, you can stuff them with vegetables or mince (like a bolognaise) too, but cooking time will increase.

You need to put them over a flame, whether its on the grill or even on the stove, it you have a gas burner (I've done that in the winter when it is too cold outside. Cook until the skin is black then put in a paper bag for 5-10 minutes. They are then ready to have the skin removed and the seeds pulled out.

Deseed them and if you have a gas cooker, get tongs or a cooking fork and hold them over the burner. Other than that put them on a BBQ. If you want to roast them in the oven, brush with some oil, put on a backing tray and cook on high heat.

If you have gas burners, stick a fork in them and turn them over in the flame. Otherwise grill them. When the skin blackens pop them in a plastic bag for a few minutes - the skin is then easy to flake off. Naturally the BBQ is the best way - if it stops raining!

Cook over gas flame or grill til charred on the outside. Place in a bag, and let them set a few mins to steam and cool.. Remove that charred skin without rinsing easily. Eat and enjoy
