Take 3 packs of chicken breasts & fry them up spiced up with garlic and pepper. As the breasts cook, chop them lengthwise until they are cooked into hearty finger'lets.
Day one -- Wraps
Day two -- Over a Salad
Day three -- sub-sandwich or panninni
Day four -- take the remainder & make either chicken chili or spaghetti sauce.
Day five -- what they hey, you've been eating healthy all week ... go treat yourself !!!!

The best meals to make for one are the same meals that you would make for 4 or 5. Unfortunately, it is very hard to cook for just one.
Some things of course are pretty easy to do for one person - salad, baked potato, steak, hamburg, that kind of thing. When I've had to live alone, though, I have always wanted things like spaghetti and meatloaf, things that are nearly impossible to cook for just one.
Two things I have found very helpful. The first is a book called "Betty Crocker's Dinner for Two." This is a book that I had when I was first married that has recipes for real food that make just two servings. This does not seem to have been reprinted yet, but you can get a used copy from one of the sellers here for as little as $0.01 plus $3.99 shipping-

I got one for each of my daughters when they went off to college.
The other thing that I have found very helpful is my freezer & microwave. Very often (even when I am cooking for many more than one) I will spend a day or part of a day cooking large batches of many different things and then freezing them in portions that are just right for one meal. The food is much better quality that what I could buy in the frozen food department and costs me much less.

the best meals are the ones that you make enough of to take for lunch the next day. when i was single i used to live on frozen stirfry veggies, brown rice and ramen noodles. I then got smart and started making my meals a week in advance and froze them and took one out every morning so when i came home i just had to heat it up and add a salad or noodles or whatever to it. what i am trying to say is no sense in putting in the effort to feed one person once you may as well make something you can eat again the next day or freeze for another day. check out www.kraft.com they have a really great variety of meals that will freeze well. cheers!

You are best off to cook a meal for 2-4 and then portion the rest off and freeze. You will have meals to eat later :0)
(Kinda think of TV dinners)
I taught my mom this after my dad passed away and her freezer is full of wonderful meals and she is very happy with the idea

Actually cooking for one person? I say anything you want it all depends on what you like to eat. Are you looking for easy meals or is it for someone else? I think you need to put a little bit more info before determining the answer to your question.

GRILLED PEANUT BUTTER AND BANANA SANDWHICH
INGREDIENTS
cooking spray
2 tablespoons peanut butter
2 slices whole wheat bread
1 banana, sliced
DIRECTIONS
Heat a skillet or griddle over medium heat, and coat with cooking spray. Spread 1 tablespoon of peanut butter onto one side of each slice of bread. Place banana slices onto the peanut buttered side of one slice, top with the other slice and press together firmly. Fry the sandwich until golden brown on each side, about 2 minutes per side.

1 chicken breast
1 pkg. or can undiluted cream of mushroom soup
1/2 c. water
1 tbsp. lemon juice
2 tbsp. sliced mushrooms
Dash of salt
Dash of sage
Wrap chicken in heavy duty foil. Combine soup, water, juice and mushrooms, sage and salt. Pour over chicken in center of foil. Bring 4 corners of foil together and fold and bring under chicken. Bake at 375 degrees for 45 minutes. If more than one eating add more of everything.
*************EASY TACO-CORN CHIP MEAL
Make your favorite chili or chili beans. Crush 1 large bag corn chips. Cover bottom of baking dish. Cover chips with chili (about 1/2 of it). Sprinkle with chopped onions as desired. Sprinkle with grated cheese or cheeses such as Velveeta, sharp cheddar or Mozzarella. Repeat layers.
Bake at 350 degrees about 15-20 minutes. Serve with salad or top each serving with chopped lettuce and tomato pieces and/or sour cream or salsa sauce. Experiment.

CHILI FOR ONE PERSON
1/2 lb. chili meat
2 tsp. chili powder
2 tsp. paprika
Sprinkle of cumin
Sprinkle of garlic powder
A little flour for thickening
Cook all ingredients except for flour 1 1/2 hours. Thicken with flour and cook a little longer.

Well, when my grandson is here it all sorts of good stuff, fried chicken, pasta, pork chops and such. If he goes out it is too much to cook for just me. So it is TV dinners, Togo's, Mickey D's or some Chinese take out.
