I got some french fries at a quick food place while on vacation.
They had a coating on them that was really good.

Can any one tell me of different types of coatings on French Fries.

Cajun French Fries

Baked french "fries".

Ingredients:
6 Medium Idaho potatoes (6 oz. each), peeled and sliced into eighths
1 tblsp. Canola oil
1/4 tsp. Cayenne pepper
1 tsp. Chili powder
1/2 tsp. Cumin
1/2 tsp. Salt
1/4 tsp. Ground black pepper

Preparation
Preheat oven to 350 degrees. Combine potatoes and oil in a large bowl and toss well to coat. In a small bowl, combine cayenne pepper,chili powder, cumin, salt and black pepper. Sprinkle over potatoes and toss well until all potatoes are coated with seasoning. Coat a large baking sheet with cooking spray and spread potatoes evenly on baking sheet. Bake for 30 minutes or until golden brown and crispy.

Original recipe yield:
1 serving

PREP TIME 5 Min
COOK TIME 45 Min
READY IN 50 Min

INGREDIENTS:
1 large baking potato
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder

DIRECTIONS:
Preheat oven to 450 degrees F (230 degrees C).
Cut potato into wedges. Mix olive oil, paprika, garlic powder, chili powder and onion powder together. Coat potatoes with oil/spice mixture and place on a baking sheet.
Bake for 45 minutes in preheated oven.

egg white wash: french fries coated with a beaten egg white, sometimes mixed with seasonings...like season salt or sea salt and vinegar....

Sometimes there's good spices - garlic, old bay (it's good!), and a mixed spice with hot/flavor...
