BACON & EGG CASSEROLE

6 eggs, beaten
6 slices of bread, cubed
1 c. Cheddar cheese, grated
1 lb. cooked bacon
2 c. milk
1 tsp. salt
1 tsp. dry mustard

Butter casserole. Lay cooked bacon on bottom of casserole. Add remaining ingredients together. Pour over bacon. Cover and refrigerate for 12 hours. Bake in 350 degree oven, covered, for 1/2 hour. Uncover, and bake 45 minutes more. Serves 6.
I cook 4 slices of bacon at a time (on paper towels below and above) in microwave oven for 4 minutes. This helps to remove a lot of the grease from the bacon.

An old, easy Pillsbury recipe that I have is for a bisquit and sausage quiche. Here are the ingredients:

12 oz of your favorite type of breakfast sausage
1/4 cup of chopped onions
10 beaten eggs
1 cup (4 oz) of shredded cheddar
one 12 oz can of refrigerated buttermilk biscuits

Here are the steps to take:

Brown the sausage and onions and drain the fat well. Combine the eggs, cheese, ans sausage mixture. Separate the biscuits and press them into the bottom of a 9 by 13 pan that you sprayed with cooking spray. Pour the egg mixture into the dish and bake at 375 degrees for 30 to 35 minutes, or until the eggs are set and deep golden brown. Cool 5 minutes before serving.

You can, of course, make any changes you like as long as you stick to the basic recipe. Other veggie options are green peppers, tomatoes, mushrooms, broccoli, spinach--anything you would put into an omelet. You can also use a different kind of cheese, although for me cheddar works best with this recipe.

You can also make breakfast smoothies to go along with the main dish by putting your favorite fresh or frozen fruit in a blender (if you use fresh, I recommend adding some ice cubes so the smoothies are chilled). Then add either milk for a creamy base or juice for a sweeter, fruity base and as much or as little sugar or sugar substitute as you like. Hope this has been helpful to you, and good luck with your family breakfast!

I know this is a "campfire" breakfast, but the same effect can be done using the medium heat of a stove.

Campfire Skillet Breakfast
1/2 lb. bacon
4 large potatoes, peeled and cubed
1/2 an onion, chopped, optional
6 eggs, beaten
1 cup cheddar cheese, shredded

In cast iron skillet over fire, cook bacon to desired doneness, rendering fat from it. Remove bacon and set aside.Add potatoes and onion to pan, cover and allow to cook for 10-12 minutes or until done. Crumble bacon into bite size pieces and return to pan. Add eggs and cover 2 minutes until cooked through. Top with Cheese and cut into slices and serve.

I know this will sound gross, but cook them some scrambled eggs with cooked rice and ham mixed together. Here's what you do:

Cook some rice,(or if you have any leftover rice) and put it in a skillet. You can use as much as you want. For just me, I usually use about 1 cup.

Then cut some ham up, or any kind of lunch meat like pork, chicken, etc...
Put a little dab of butter in the bottom of the skillet, so the rice wont stick. Stir the rice and ham around the skillet until its heated.

Then put eggs in it. All you have to do, is scramble some eggs in the same skillet with the rice and meat, until the eggs are completely done.

You can have toast with it, or whatever you usually have for breakfast.

You can do pancakes with any kind of mix, eggs (whatever way ur family likes them.), or if ur not a vegetarian bacon or sausage. Eggs Benedict is good too. All you need are EGGS, the sauce (you can buy it at most grocery stores), toast, and ham is optional. Just follow the instructions for the sauce, make scrambled eggs, toast some bread, and maybe make some ham, then you put it all together on top of the bread!! Hope I helped a little!!!!! : )

You can make specialty pancakes - you can add blueberries, or small chocolate chips, or you can make them chocoloate by adding Nestle's Quick to the batter. My kids also like to make different colors of pancakes by adding food coloring to the batter. Also, if you have parfait glasses, layer fruit and Cool Whip for an elegant addition to the meal. If you don't like the pancake idea, you can easily make a breakfast casserole by mixing one package of uncooked hashbrowns, one pound of cooked breakfast sausage (like Jimmy Dean), one dozen eggs, and two cups of shredded cheddar cheese. This is an easy recipe that goes over very well.

egg mc muffins and hashbrowns. just scramble up some eggs put on an english muffin or bagel fry up a piece of ham or bacon and throw that and a slice of cheese on it and give it a minute in the oven to melt (use the broiler setting) to make yummy hashbrowns: the night before put 5-6 potatoes (more for more or really hungry people) into the microwave til they are cooked. then cool them and leave them in the fridge. in the morning just cut them into pieces and fry with a little oil or butter and some onion.

you could also make breakfast burritos using a few sausage patties broken up or bacon, bell peppers, onion and eggs.

in a frying pan on medium heat add broken up patties or links to the pan, add onions and peppers too. cook til sausage is browned. meanwhile scramble up some eggs and get out tortillas, warm the tortillas in the microwave for 10 seconds each for easy rolling. grate some cheese. add eggs to pan with the rest of the stuff and cook. fill each tortilla with eggs and stuff top with cheese and roll, or you can serve them open and let your family roll them up after they have added salsa or whatever they prefer. serve with hashbrowns and juice milk and coffee and maybe a fruit plate.
