Why is sentada/sentados change form when talking about numerous people? No other verbs that I have learned do. Un hombre esta bailando/Unos hombres estan bailando. Bailiando doesn't change so why does sentada/sentados
Un nino en una bicicleta - a boy on a bicycle
unos hombres en bicicleta - men on bicycles
Why is bicicleta not plural when talking about numerous men on numerous bikes? Is it wrong to say "Unos hombres en bicicletas"
Un hombre esta andando en motocicleta - a man riding a motorcycle
Is it really ok to use andando (walking) to describe riding? Would it be acceptable to use montar/montando instead
Un hombre esta andando en motocicleta
Una muchacha esta montando a caballo
When are you supposed to use "a" and "en"? Could I say Una muchacha esta montando en caballo? If not, why?

This is because (sentada/sentados...) is not a verb in this case.. it's an adjective. we are referring to the (niña, niños) and we describe that they are sitting with an adjective.
For the second, you have to know that spanish has a lot of irregularities( ir en bicicleta) can be aplied for singular and plural numbers.
the third could be:
Un hombre está montando en motocicleta.
Un hombre está yendo en motocicleta.
The last thing that you raise is more difficult to understand:
The most used in this case would be ( en)
ex:
montar en coche
montar en bicicleta
ir en coche
ir en bicicleta
but we use (en) because we are riding an inanimated object ( car, bycicle)
in those cases we use (A) when we ride an animated object:
ex:
montar a caballo
montar a camello
ir a caballo
ir a camello
( we ride animals in this case, so they are animated objects and we use "a").

For sentada/sentados because you are useing the verb is(esta)/are(estan)
Same with bailando also, it is an action word in active movement.
In bicycles for men on bicycles it is Hay unos hombres en bicicletas There are men on bicylcles(each on has a bicycle) or if you just say hay hombres en bicicleta then it is There are men on a bicycle(many on one)
For the motorcycle it is: Un hombre esta montado en una motora, or un hombre esta corriendo en la motora.
For "a" and "en", depends on how you say it and if it is an object or animal. Ex:
Estoy montada a caballo (I am riding a horse)
Estoy montada en la motora (I am riding on a motorcycle)
Both are prepositions.

Q1. La niña está sentada is really 'the girl is seated' (sitting) where seated is a past participle and agreees with the noun. El hombre está bailando - this is the present progressive tense using the present participle - bailando - which does not change with gender or number.
Q2. Unos hombres en bicicleta is 'men riding' rather than 'men on bicycles' and therefore does not change with number.
Q3. En moto / a caballo - you have to learn them, like 'on a bus, by plane, on a horse, in a car. I think you last question might involve bestiality; but I'm not sure... but that's probably why not.

The verb change is because the participles are being used as adjectives. Each person has one bicycle so in Spanish it is not thought of as plural. Andando means going not just walking so it can be used there. Montado works too. I'm not sure about the dichotomy of horse and motorcycle, but maybe it's because the horse is alive. It's probably just custom. Why is a bull rider a jaripero and a horse rider is a jinete? I don't know but you're noticing the things that will distinguish you from someone who speaks Spanish poorly.

Okay, the top one is an exception. On the bicycle one, bicicleta is always plural, so you wouldn't think it would make sense but they are both already plural. Yes you can say Una Machach esta montando en caballo. Hope this helps,

because girl if feminine thus sentada and children are plural and in that sentence esta is your verb is like saying is seated is is your linking verb.
the boy/men on bikes frase not sure that is proper i would need a whole sentence.
you could use montar but that means to mount and andar means more or less to go about. ex. ando por la ciudad doesn't necessarly mean i am walking around the city it could mean traveling on bus or bike......
the girl on a horse would be esta montada because again esta is your verb.

sentada means seated which is not a verb, it's an adjective and has to agree with the noun in gender/number
sentando is sitting and that would not change
bicycle is a noun, object of a preposition, it doesn't need to change because only adjectives and articles change for agreement.
montando is also acceptable
my only guess for montando a caballo is that caballo is an animal.
