Every recipe I have tried the breading falls off. How can I do it so it's good? Also will the breading also work for onion rings?

You need to dust your zucchini slices in flour, THEN dip in egg wash and THEN in yoru bread crumb mixture. It will stay on this way.

The best way that I have made is as follows:

Slice the Zucchini in to 1/4 in. slices

Lay them out on paper towels to collect the moisture out of them.

Beat 4 eggs together in a shallow bowl

Put plain or italian seasoned bread crumbs into another shallow bowl.

Dip the Zucchini into the egg, the drop into the breadcrumbs and completly cover.

With a skewer pick the breaded Zucchini and place it into a saucepan with olive oil at medium heat.

When the side of the Zucchini start to brown, flip it over until you acheive the desired consistancy.

No Problem,you can add onion rings..
cooking is not by law!

------------ Fried Zucchini

INGREDIENTS

* 2 zucchini, quartered and sliced
* 1 onion, sliced into rings
* 1/2 cup all-purpose flour
* 1/2 cup cornmeal
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1/4 teaspoon garlic powder
* 1 cup vegetable oil for frying

DIRECTIONS

1. Place zucchini and onions in a medium bowl and mix together.
2. In a small bowl mix flour, cornmeal, salt, pepper and garlic powder.
3. Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
4. In a medium skillet heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning to brown evenly.

Yes you can use for onion rings also.

FRIED ZUCCHINI

3-4 lg. zucchini
3 c. flavored bread crumbs
2 cloves garlic, crushed
1/4 c. grated Romano or Parmesan cheese
Salt and pepper
Oil - vegetable for frying
2 eggs
1/8 c. milk

Wash (do not peel) zucchini. Slice in circles or lengthwise approximately 1/4 inch thick. Beat eggs and milk together in bowl. Dip zucchini in egg mixture, add crushed garlic, cheese, salt, and pepper to bread crumbs in large bowl. After egg mixture dip zucchini in bread crumb mixture coating both sides well. In large frying pan, place oil and fry zucchini until golden brown. Lay on paper towels to absorb oil. Makes a great sandwich!

Fried Zucchini
INGREDIENTS

* 3 zucchini
* 1/4 cup yellow cornmeal
* 2 tablespoons olive oil
* salt and pepper to taste

DIRECTIONS

1. Wash and dry the zucchini. Trim off ends, then slice zucchini into 1/8 inch thick rounds. Place cornmeal in a medium bowl, and toss in zucchini slices, mixing thoroughly to coat.
2. Heat oil in a large nonstick skillet over medium heat. Place all of the zucchini pieces into the hot oil and fry over medium heat. Sprinkle with salt and pepper. Watch zucchini closely, adding more oil if it begins to brown too quickly. When it is golden brown on one side, flip it over to brown on other side. It will clump together as it cooks, that is what you want.
3. When zucchini is evenly browned, turn heat down to low and cover pan with a lid. Allow it to steam until zucchini is slightly tender. Turn zucchini, replace lid, and steam until soft. Remove lid and turn heat back up to medium-high. Fry on both sides until crisp. Serve hot.

When you slice the zucchini lay it out on something and salt it and leave it for an hour or so to get the excess water out of it. Then dry the slices off and use a batter.

Batter
1 cup of Bisquick pancake mix
salt and cayenne pepper
dash of paprika
dash of garlic powder
enough water to make a thick batter

Dip dried slices in batter and fry. Have plate ready with paper towels and stand slices on end to drain...

Very good and crispy...
