The biggest things impacting this are the humidity in the air and materials used.
If it is humid out, the mortar will take longer to dry.
If you used the pre-mixed mortar (also called thinset) it will generally take longer to completely set. If you used regular mortar with water or flexible additive, it should be dry and able to walk on in 8 hours. I tiled my kitchen on a hot, dry day in July last year and I was able to walk on the floor in 4 hours.
As a rule of thumb, always test a tile before walking on the floor.

Once ours where in place we let them set for 24 hours.
We did the grout the next day and then let it set again for 24 hours before we did the final washing off of the grout.
It worked really well.

Usually 24 hours. It can also depend on the humidity. The adhesive you used should have recommendations for this.
