roll the fish in seasoned (seasoned salt, garlic powder, and lemon pepper) corn meal, and fry it in canola oil. you probably want the oil at around 350 degrees. the fish is done when it is a nice deep golden brown color. then you drain it on paper towels and let it cool for 10 minutes before eating.

Tempura for Fish and Vegetables

1 cup all-purpose flour
2 tablespoons cornstarch
(and 1/4 cup cornstarch in a shallow bowl)
1/2 teaspoon Kosher salt
1 cup ice water or cold beer (if you desire a beer batter)

Stir together flour, cornstarch and salt.
Make a well in the center.
Combine ice water or beer beat with a fork or whisk until frothy.

Use batter immediately.

Dip fish, shrimp or vegetables into shallow bowl to coat lightly then into batter, swirling to coat.

Heat peanut oil or sesame oil to 400 degrees. (use a wok and thermometer or a deep fryer with a temp sensor)

Fry a few pieces at a time 2 to 3 minutes or until golden brown.
Drain on paper towels or on a cookie rack over a paper sack.

Enjoy while still warm

After cleaning and filleting your fish, coat with a thin layer of mustard. Dredge in packaged Louisiana Fish Fry (it's in a yellow and red package and is usually found in the corn meal/flour section of your grocery store). Then, heat deep fryer to 375 degrees F (190 degrees C). Place fish in hot oil, and fry until golden brown. Cook fish in batches to maintain oil temperature.

Dip in flour and then dip it in cornmeal. Season the fish first though. Cook time about 5-10 minutes, depending on the temperature of the oil. Make sure the oil is very hot, especially if you're frying catfish.

Step one

Coat *moistened fillets or whole fish with BuyNow Dave's Seafood Breading.

* Moisten with water is fine, but milk, or 1/2 milk and 1/2 egg can be used too.

Step two
Place fillets in 350 to 375 degrees Fahrenheit vegetable oil. Oil should be deep enough to completely cover fish.

Step two

When fillets are a light golden brown* and floating remove from oil. About 3 - 6 minutes depending on thickness of fillet.

* Using Dave's Cajun Breading finished product will be darker.

Step three

Drain on paper towels.

Step four

Invite your friends and enjoy. Be prepared to be worshipped.

deep fryer should be set at 350 or if it has it the fish setting on that one. next you need a good beer batter, some seafood restaurants may give you a little bit of batter if you ask them really really nice. the whole point of deep frying is so that you can cook it really fast. if your deep fryer has a basket, take the basket out and let it float in the oil free like when it was alive!
