CRAISIN CRANBERRY BREAD
2 cups flour
1 cup sugar
1 teaspoon vanilla or orange extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup butter, melted
1 egg, beaten
1 teaspoon orange peel, grated
3/4 cup cranberry juice or buttermilk
1 1/2 cups Craisins
1 1/2 cups cranberries, fresh, chopped
1/2 fresh peeled orange, pulped (optional)
1 teaspoon grated orange zest (optional)
1/2 cup chopped pecans or slivered almonds
Combine all ingredients, taking care not to overmix. Mixture should still be lumpy.
Spread batter in a greased and lightly floured loaf or small bundt pan. Sprinkle top lightly with sugar.
Bake in a pre-heated 350°F oven for 1 hour and 15 minutes, or until lightly browned on top.
Note: Cake flavor may be varied by substituting two tablespoons Kirsch, Drambuie, Grand Marnier, Amaretto or Dark Rum for the extract. If using one of these, soak the Craisins in the alcohol for ten minutes before starting; then add together. Reduce buttermilk or cranberry juice by the same amount.

Sausage Balls With Apples and Craisins
1 lb bulk pork sausage
2 1/2 cups baking mix
2 granny smith apples, grated with peel
1/2 cup craisins
1/2 cup raisins
1 cup pecans, chopped
1. Preheat oven to 350 degrees.
2. Spray 2 24-count mini-muffin tins with non-stick spray.
3. In large mixing bowl combine all ingredients. Spoon into mini-muffin pan. Bake in preheated oven for 20 minutes or until brown.
4. Can be made ahead of time. Simply thaw and reheat before serving.

CRAISINS BREAKFAST MIX
INGREDIENTS:

1/2 cup shredded coconut
1/2 cup chopped dried apricots
1 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
1 cup puffed rice
DIRECTIONS:
Combine all ingredients; toss well to combine. Store in an airtight container. Serve with milk, yogurt or fresh fruit.

Wild Rice and Craisins
1 small box wild rice
2 1/3 cups chicken broth
¾ cup chopped celery
¾ cup pine nuts
¾ cup Craisins
Grand Marnier
¼ cup Zesty Italian Dressing (optional)
Place craisins in small bowl and almost cover with liqueur. Let marinate for one hour, then drain and add to rice mixture.
Cook rice according to package directions, using chicken broth instead of water. Add a small amount of salt to the cooking rice. Drain.
Mix rice, celery, pine nuts, drained craisins, and Italian dressing. Mix thoroughly and serve.
This is best at room temperature.
NOTE: I got this recipe from a friend in Georgia. I used Uncle Ben’s wild rice and I did add the Zesty Italian Dressing, which I had made using tarragon vinegar. The friend whose recipe it is said she sometimes adds it, but not always. I chose to, as I think it really adds to the flavors of the dish.

Craisins - the cranberry raisin - is good in oatmeal cookies (omit nutmeg it conflicts) in salads and in meatloaf just mix it in with your favorite and enjoy!

Chicken salads, regular lettuce/tomato salads.....craisins can go into most healthy things, oatmeal, turkey breast, anything really.

try the back or the packaging mine has a recipie for cran banana bread and a salad recipieit tastes good in basically anything ohh try oatmeal it'll make that taste good
