add 1/2 to 1 stick of butter
mash... add 1/4 cup to 1/2 cup of milk... mash to desired consistency.

I use red potatoes, and don't peel them because that's where all the vitamins are and it looks more rustic when finished. Cut them into quarters and boil them with 3-4 garlic cloves in the water, (save a bit of the potato water and use that instead of butter and milk if you want to cut calories and fat)
While the potatoes are cooking, chop half of a sweet onion or 3-4 green onions with their green parts too (that's chives).
When the potatoes are fork tender use a colander to drain the potatoes and put the hot pan back on the stove and melt some butter. Saute the onions until tender, add the potatoes and mash with milk and butter until desired consistency.

Put your potatoes, cut in halves to boil in water that is just covering them. Add some salt, depnds on how much potatoes. Just a pinch. Let the potatoes boil for about 5 mins then pierce one with a knife to test the softness. If they aren't soft enough let them continue to boil, and occasionally keep on testing to see if they are soft enough to mash.
When soft enough take potatoes out and mash whole hot with some butter and milk. Taste all the time while doing this to see if anything else is needed. It is really a matter of averaging and not direct measurments. Also taste to see if more salt is needed. The softer you want it the more milk you should add.
You can also add eschellots or onioins to give flavour. Also you can boil the potatoes in chicken broth to give it that flavor too.

Here's a very basic recipe:
3 medium potatoes (1 pound)
2 tablespoons margarine
4 tablespoons milk
Peel and quarter potatoes.
Cook covered in a small amount of boiling salted water for 25 minutes.
Drain.
Beat with an electric mixer on low speed.
Add margarine.
Salt and pepper or nutmeg to taste.
Beat in enough milk to make potatoes light and fluffy

Bake or Boil the potatoes. Baking is better but boiling is easier and good too. Don't peel or cut the potatoes if you bake them. Cut them and peel them if you want to boil them. Cook until fork tender. Brown (but don't burn) some butter in a pot that will hold the potatoes. Toss in the boiled potatoes or scoop out the baked potates into the browned butter. Mash with a hand masher. Warm some heavy cream in a cup in the microwave add the warm cream to the potatoes and mash some more. You can whip them with a hand mixer if you want, but I don't like them that way.

You can try one of the recipes above but, I like to add some crushed garlic cloves (to taste) to my mashed potatoes. The kids love it this way. I also whip them with a hand mixer and don't forget the salt and pepper. I find if I cook to much potato that I have to add way too much milk/cream and butter. Try having some potato left over and add it to the mix if you don't have enough. Good Luck!

Peel and boil baking potatoes until you can stick a fork in them and they are somewhat soft. Drain out the water, and begin to mash potatoes in pan, add a little milk, and butter. and continoue to mash. Add a little cream cheese, this gives you a very creamy mashed potatoe. mash until desired consistency, adding milk along the way.

MASHED POTATOES
6 unpeeled, mashed potatoes, Idaho
1/2 c. heavy cream
1/4 c. whole milk
1/4 tsp. sage
1/8 tsp. white pepper
1/8 tsp. thyme
1/8 tsp. salt
1/2 tsp. black pepper
Cook potatoes in cold water, approximately 35 minutes. Drain and mash potatoes with a hand mixer. Mix together all the above ingredients and pour this cream mixture over potatoes. Mash and eat.

obviously boile your potatoes in salted water, once cooked mash with two or three eggs.. depending how much mash you are making.. if you are cooking a lot maybe three of four eggs.. the egg makes it fluffy and it tastes lovely and also much healthier than butter,, i also put a bit of pepper in mine.. simple but tasty :)

The basics are the same. But for a lil twist instead of milk use ranch dressing. no need for salt or butter. That will also give you a good garlic flavor. You can also use the packs of dressing an prepare according to directions. ENJOY
