It was recently revealed in one of these scientific studies thingys that when a man is physically attracted to a woman there is a change in his brain's chemicals; the cognitive rational thought centre shuts down and the visual receptors go into overload, all for the evolutionary process of reproduction I guess! Wish I could remember the source though, it'd be good to read it again.

Most guys don't want to pass up on something they see as a good thing, a girl they like or who makes them feel good to be around may seem a rare commodity and in their hurry to impress her they may wind up tripping over their own feet and tongues.
Sometimes confidence runs in short supply, when that happens motor skills can be impaired and thoughts jumbled. Attraction can take the tar out of you if you're not prepared for it, especially if there are complications in your life at that moment that affect your emotions and thoughts.

My ex did, he was so nervous about making a fool of himself around me that all he ever did was mess up, spilling things and just generally being clumsy, it was painful to watch lol, eventually when they realise that actually you are quite understanding and sensitive to their position they do relax and become more like themselves rather than a teenage boy on their first date.

yes, sometimes a girl you like will have the effect of making you skittish.
i think it has to do with anxiety and anticipation. you are hoping not to say or do something stupid or awkward.
you want to convey the best possible image. unfortunately, in this process you may become flustered.
it could be also that she may be smart as whip and her smarts may cause some discomfort resulting in more skittishness.
