Recipe
ingredients
2 cups (200 g) 7 oz Wholewheat flour (atta)
3/4 tsp Cumin (jeera) seeds, roasted, coarsely powdered
1 tsp (4 g) Salt
1 tsp (2 g) Red chilli powder
1/2 tsp Mango powder (amchur)
1/2 tsp Garam masala
1/2 cup (100 g) 3 1/2 oz Yoghurt (dahi), fresh, thick
1/2 cup (100 ml) 3 1/2 fl oz Milk
5 tsp (25 ml) Vegetable oil for the dough
Vegetable oil for frying
method
1. Mix all the dry ingredients together in a mixing bowl.
2. Pour yoghurt, milk, and oil; knead to a smooth dough. Keep the dough covered for 3 - 4 hours.
3. Divide the dough equally into 4 - 5 portions. Roll each portion out into a thick disc.
4. Heat a griddle (tawa); lay the disc flat on it and fry on both sides till light brown. Remove and repeat till all are fried.

Hi Subhibala,
the most easy way to make spicy chappatis would b to add some fresly chopped corriander leaves,some finely chopped green chillies,a bit of turmeric,and 1/2 tsp of chilli powder and some salt o taste to the dough,and once your chappatis are done you can have it with dahi and acchar.

Make a paste using the following:
some garlic,
some onion,
vinegar
green chili with seeds
coriander powder
cumin
salt
after rolling the chappati, apply this paste and fold over the chappati and roll again like u do in a paratha

Masala Kulcha
Stuff Potato Bread prepared by mixing ghee and curd with white flour
Ingredients
For the Kulcha :
300 gm Maida (all purpose flour)( All purpose flour OR white flour)
1/2 tsp. dry yeast ( for yeast see advice)
2 Tbsp. Curd/Yogurt
1/2 tsp. Salt
1/4 tsp. Baking powder
1 Tbsp. Ghee ( clarified butter)
For Filling :
250 gm Potatoes
1 tsp. Chili chopped
1 tsp. Salt 1/2 cup Finely chopped coriander leaves
1 tsp. lemon juice
Oil / Clarified butter for making the Kulcha
Advice
To prepare yeast:
3/4 cup Warm water
1/2 tsp. Lemon juice
1 tsp Sugar
Method for preparing yeast:
1. Sprinkle yeast in warm water.
2.Add sugar and leave it for ten minutes.
3. Add 1/2 tsp lemon juice to it and your yeast is ready.
Serve with
Serve hot with any gravy subji or dal.

Method for preparing Kulcha :
1.Sieve maida (all purpose flour, plain flour) and add baking powder, salt, Ghee(clarified butter), and curd to it.
2. Prepare the soft dough with yeast- water, and leave the dough for about two hours.
3.For the filling boil the potatoes and mash it very smoothly. Now mix the remaining masala and prepare a mixture.
How to proceed:
Make small ball from the dough, roll into a disc shape and put potato filling on it. Give it a ball shape by sealing its edges. Finally roll it into a thick paratha and bake on tava (griddle) by applying Ghee(clarified butter)/ oil.

Ingredients:
1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
4 teaspoons salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
4 long skewers
1 tablespoon butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
3 teaspoons salt, or to taste
1 (8 ounce) can tomato sauce
1 cup heavy cream
1/4 cup chopped fresh cilantro
What’s Next:
In a large bowl- combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.
Preheat your grill for high heat.
Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.
Melt butter in a large heavy skillet over medium heat.
Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.
Chapati Recipe
Whole Wheat Flat Breads
Mix together:
2 cups Indian whole wheat flour
1 teaspoon salt
1 Tablespoon vegetable oil
about 3/4 cup warm water (enough for a kneadable dough)
Knead the dough, cover, and leave aside for at least 1/2 hour or, ideally, up to 2 hours. After about 1 hour (or right before rolling out), punch the dough and knead again without any more water.
Make 10-12 1 1/2" balls; dip each one into dry whole wheat flour, and roll out into thin, 6" circles. Place a flat, ungreased griddle on the stove at medium-high heat. When hot, place a rolled-out chapati "right side" down on the griddle. (The "right side" is the one facing you when you roll it.) When bubbles are visible, turn over and cook until tiny brown spots appear on the side facing the griddle.
If you have a gas stove, hold the chapati with a pair of tongs, and place it directly over the burner flame for a few seconds, until the chapati puffs up. Turn and repeat on the other side.
If you have an electric stove, keep the chapati on the griddle. With a wadded up paper towel to protect your fingers, press gently all around the chapati. Flip the chapati and press gently around the other side. This procedure should make the chapati puff up. (If you press too hard, the chapati will become too crunchy.)
Remove the chapati from the heat, and buter with ghee on the "right side."
Some of the foods that are traditionally served with chapatis are Lentils with Scallions, Spicy Mung Beans, eggplant dishes, green bean dishes, spinach dishes, and zucchini dishes.

take maida aata, put haldi, red chilly powder, ginger paste, garlic paste,salt,dhaniya powder,chopped coriander, water n mold it in form of aata.
now make small pieces of chappatis n fry it
