Okay so I have never been a meatball eatting person, but this past christmas I went with my mom to her office christmas party, they had a caterer and one of the items they had was Swedish Meatballs.... I imediatley feel in love! My question, does anybody know of an easy recipe used by caterers that I could convert to a crock pot recipes and when I have the time an oven recipe? actually I'm not even sure if they go in the oven! lol But I do know they had a creamy sauce that kinda reminded me of a cream of mushroom soup. Thanks anybody who can help me!

1 1/2 lbs ground beef
2 cups potatoes, peeled,cooked,and mashed
1 small grated onion
1/4 cup chopped peeled cooked beets
2 tablespoons chopped dill pickles
2 eggs
1/2 cup light cream
2 teaspoons salt (to taste)
1/4 teaspoon pepper (to taste)
4 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 cup beef broth
1 cup milk
1/2 teaspoon worcestershire sauce
1/8 teaspoon ground nutmeg
hot cooked noodles
Mix ground beef lightly with mashed potatoes, onion, beets, dill pickles, eggs, cream, 1 tsp salt, and pepper until well blended.
Shape into 36 meatballs, then flatten each slightly.
Brown, a few at a time, in butter or margarine, in a large frying pan, adding butter or margarine as needed.
When cooked through, remove with a slotted spoon and set aside.
Blend flour and remaining tsp of salt into dripping in pan (add more black pepper if you like); stir in the beef broth, milk, nutmeg, and Worcestershire sauce.
Cook, stirring constantly, until the gravy thickens.
Place the meatballs in the gravy and simmer 10-15 minutes on low.
Serve over hot cooked noodles

When I cook meatballs I just get a package of frozen pre-cooked meatballs, I heat them in a skillet then put either Golden Mushroom or Cream of Mushroom soup over them.
Go to www.foodtv.com and in the search box type in swedish meatballs, they should have quite a few recipes ranging from easy to hard on that site.

You really don't need to cook them in a crockpot. Most people only keep them hot in there for a party. They are a lot easier to make in a pan and dump them in the crockpot afterward. I make these often for casual parties they are quick easy and go over really well.

2 boxes of frozen meatballs (not the Italian style)
2 cans of cream of mushroom soup
1 container of sour cream
chicken stock
salt
pepper

Put the frozen (they have to be frozen) meatballs in a pot with both cans of soup and equal amounts of chicken stock. Let this simmer and reduce until the meatballs are cooked through. The amount of liquid in the pan should have reduced by about 1/4. At this point turn the heat off and stir in the sour cream. Taste the sauce at this point, you may need to add salt and pepper. It depends on the type of meatballs, soup, and stock you use. They are all the way cooked at this point add them to a low crockpot, they will be good for a few hours on low.

I am Swedish and I make swedish meatballs. but I do it without a resipe. I just do it.
I start with a pound of high quality Hambuger meat. Then I buy a quater pound of ground Pork. I personally put my hands right in the mixture squeezing it. I put in a large egg stired.
THen I add finly chopped onions. I use dried bread or saltien crackers smashed up in very small crumbles. Which I put in the egg, I sometimes add some ketchup (although that probably isn't swedish.

The key is to mix well and mush it very fine. Then Heat a frying pan with some butter. I like small meat balls. get out a bowl of flower to mix =. Use a spoon the size you want the meat balls that you want. get the pan hot. I like to carmolize some chopped onions while getting the pan hot. Then I roll a ball and then roll it in the flower mixtue which I put salt in...
Once the ball is nicely covered with flour (sometimes I put the ball in an egg mix then in the flour. it depends on my mood.
Also if the cracker and onion mix is dry you can use a bit of cream or milk to it. Make the pan hot with butter. put your meat balls in. Let them brown, then turn them. Two main sides and also brown all sides. A good browning gives a great left over to make gravy.
Once the meat balls are brown you can slowly cookin the fry pan. Ocassionally covering it. Turn over the balls as needed.
Once they are the brown that you desire. Put the balls in a bowl. Then put some hot water in the pan. Or is you are boiling potatoes you use that in the pan to make your gravy. If you want smooth gravy then strain the meat juice before making gravy. it the taste of the juice is strong, you can add more water or potato water. Take a jar of hot water. Add a table spoon of flour. Then shake it, mixed well. Turn up the heat and slowly stir in the flour mixture. Stiring often so you don't get any lumps in the gravy. If you need more gravy or want that mushroom taste you can use cream of mushroom soup. Just add enough to balance out the gravy. Str well, make sure you scrape the bottom of the frying pan to get all the flavor. Then put the meat balls back in the gravy mixture.
Simmer for half an hour or less. Then enjoy. Let me know how it goes.

I can tell you how to make meetballs.

500gram minced pork
250 gram minced beeef
5 eggs
1 onion
salt, pepper and curry powder.
Flower.

You mix the minced meet together with the eggs and chopped onions.
Put in salt pepper and a bit of curry powder for flavour. Paprika is good too.
When it is all mixed well put in a couple of tablespoons of flower. It kind of binds it all together.
Leave the mix in the fridge for half an hour.
You can either fry it or cook them in the oven. The best result is from pan frying.
Pan fry them until they are golden brown all over. Keep them heated in the oven.

hmmm... grab a bag of IKEA brand meatballs, couple cans of creamy soup, fry them in a pot and go to town I guess.
