Oh switch it up, I love making an omelet with Prosciutto and Parmesan Reggiano. I really like strong cheese like Feta cheese or any other goat cheese. Just experiment with them. Jack and Cheddar are also good with bacon and onions in it.

Well it really depends on the typs of omlet you are making. For a tradirional omlet I prefer cheddar cheese. On occasion I like a nice greek omlet featuring spinach, red onion, olives, lamb, and feta cheese.

You know those packets of American cheese that come in individual slices? When you are making your omelet, you just get a slice and seperate it into smaller peices and let it melt. :)
