Cheesecake Cupcakes
You will need a 12 hole muffin pan
INGREDIENTS
12 vanilla wafers (Nilla Cookies)
2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1 teaspoon vanilla extract
2 eggs
Preheat over to 325.
Line muffin tin with cupcake liners. Place 1 vanilla wafer in each liner.
Mix cream cheese, vanilla, and sugar with an electric mixer on medium speed until well blended. Add eggs, and mix well. Pour over wafers, filling 3/4 full.
Bake for 25 minutes at 325 degrees F . Remove from pan when cool. Chill.
You can add jam, snickers, reeses, or oreos to each different cupcake for something different.

I think a jello cake can be made for almost any occasion and it is very easy and tastes and looks very pleasing. Buy a white cake mix like Duncan Hines or Betty Crocker. Bake the cake as directed. Meanwhile take a large pkg. of jello what ever kind you think she would like.(I like to do this one with mandarin orange). Instead of the 2 cups of cold water and 2 cups of hot water for the making of the jello leave a half of a cup for each one out. When the cake comes out of the oven poke holes all over the top of the cake, drizzle the jello liquid over the holes. Put the cake in the fridge to cool. When it is totally cool cover the top with cool whip and decorate with mandarin oranges and pieces of fresh mint. Grandma will be real impressed. (it's a great dessert anytime) You can also do this with strawberries and strawberry jello or berry and berry jello.

Here's one that's easy, cheap, and you can do it ahead of time if that helps.
Bing Cherry Jello
Box of cherry or black cherry jello
1 Can of large dark sweet cherries, drained
Coca-Cola
In a fancy glass bowl, make the jello adding the hot water as directed. Instead of adding the required amount of cold water, substitute Coke for the water, using the same amount.
When jello is slightly set, add the sweet cherries and stir lightly.
Serve when set and top with whipped cream if desired.
This is a crowd pleaser, and can easily be doubled if you're feeding a group. The Coke adds an unusual "zing" to the jello. We always had it on holidays.

Try this one out - it's really tasty, and so easy to make. I really don't have a name for it... the friend who gave the recipe to me called it "something different"
What you need:
1 box of graham crackers
2 boxes instant chocolate pudding
2 boxes instant vanilla pudding
1 regular size tub of cool whip
a 9 x 11 rectangular pan (preferably a glass baking dish)
How to make it:
Make the puddings according to package directions
Put one layer of graham crackers on the bottom of the pan. Next, coat with a layer of pudding. Then put another layer of graham crackers. Alternate with the other flavor of pudding. Do this until all graham crackers and pudding are gone. Cover and refrigerate overnight. Just before serving, add cool whip to the top - serve, and enjoy!

Classic Cherries Jubilee
INGREDIENTS
1/2 cup white sugar
2 tablespoons cornstarch
1/4 cup water
1/4 cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
1/2 teaspoon finely grated orange zest
1/4 teaspoon cherry extract
1/4 cup brandy
3 cups vanilla ice cream
DIRECTIONS
Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.
OR
Bananas Foster
INGREDIENTS
1/4 cup butter
2/3 cup dark brown sugar
3 1/2 tablespoons rum
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
3 bananas, peeled and sliced lengthwise and crosswise
1/4 cup coarsely chopped walnuts
1 pint vanilla ice cream
DIRECTIONS
In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream.

lemon custard on angel food cake. Easy to make with fresh lemons (zest and juice), egg yolks, sugar, and butter; email for a recipe - it's very easy just mix all ingredients together, cook in double boiler 10 to 15 minutes or until mixture coats spoon and let cool. Top with blackberries.

Strawsberry shortcake - use the recipe for shortcake on the Bisquik box (the regular, not the low fat)
Fresh strawberries and a couple of packs of frozen, well defrosted (the juice is wonderful)
Bake the cake, and split it.
Ahead of time, clean and split the fresh berries, sprinkle lightly with sugar and put in the fridge (you'll use those on top)
Just before you're ready to serve, whip fresh cream. (If you put the bowl and the mixing paddles in the freezer ahead of time, it will go faster.)
The defrosted berries and juice in the center, put the top layer of cake on, add the whipped cream and decorate with fresh berries. Magnificent.
And make extra, cause folks will want seconds

Dirt Cake- sounds gross but trust me ohhh so good
1 pkg oreo cookies
2(31/2oz) instant vanilla pudding
3 c milk
1 pkg cream cheese
1c powder sugar
1(8oz) cool whip
Crush oreos in blender or food processor(i let my kids put cookies in bag and use a rolling pin makes it fun for them) Put half of mixture in bottom of pan(9x13)
Next mix together pudding and milk set aside and chill In seperate bowl cream the cheese and powder sugar until smooth w a mixer. Fold in prepared pudding and cool whip put on top of crushed oreos and top with left over crushed oreos. Chill before serving. Or you can freeze and make it like a icecream cake. This is always a crowd pleasere I never have any left at church functions or parties. Or if you want to go fun with it get some gummie worms and a fake flower and put these on top of the "dirt" to make it look like a bowl of flowers.
Easy Chocolate Eclair
Graham Crackers
Cream Cheese
2 small boxes of vanilla pudding
1 (8oz) of cool whip
1 can of chocolate frosting
Line a pan with crackers mean while make pudding according to pkg. In another bowl cream the cheese then add pudding and fold in cool whip put on top of crackers top with more crackers melt chocolate frosting in microwave and pour on top of Eclair. Chill and serve

This is soooo delicious and easy to make.
Death by Chocolate
1 box chocolate cake mix
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a glass pyrex dish or a trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
optional ingredients
Repeat-
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I add oreo cookie crumbs and melted chocolate in between the layers.

Make a cheese cake with a graham cracker crust. They're delicious and the recipe is on the inside of the Philadelphia cream cheese packages. Since you use the graham cracker crust, all you have to do is whip up the filling and bake it. (Who doesn't like cheese cake?) Happy Birthday to your grandma!
