Be honest with him. Tell him that you just see him as a friend and you just don't feel the same. Tell him he is a nice guy and bring his self-esteem up and say that there will be someone else who likes him for who he is. (Kinda even out the "rejection.") You just don't feel the same way.
You can also mention the good times you had and tell him you don't regret one moment with him.

Definitly just be honest with that person and do not lead them on. Some people try to be extra nice or promise things that they cannot keep. This just ends up hurting the other person more. You want to keep a positive reputation so don't lie or be a jerk about it. Just tell the person that you care for them but the relationship just isn't working out and let them know why. Tell them that you don't like being tied down, you don't have time for it, etc.

Show the person you value them as a human being, even though you may not work as a couple (while being clear about the change-ambiguity is bad). They have these great qualities, you want to keep an open door as friends, but you're in a different place in your life, they're not right for you.

depends why you are breaking up with them.
since you are asking for a nice way, i will assume they were nice but things just werent working.
a good way to do it is to explain to them exactly why you are breaking up with them so they know for next time, but while you are doing that, tell them that they were great while you were together but things just werent working. make sure they know they at least did something right, but also what they did wrong.

don't leave them hanging. if you don't want to be with them, then do them a favour and let it go. breaking up with someone over a long period of time is a waste of your time and theirs.
just say, look this isn't working for me, i don't have the feelings i'm supposed to have for you.
