I love tart, so I go with Granny Smith.

The apple that is most commonly baked with is the granny smith apple.

An all-purpose apple with green skin, firm, crisp flesh, and a pleasantly tart flavor. Named after its discoverer Maria (or Mary) Ann Smith (died 1870), an Australian gardener. Smith had found the seedling growing where she had thrown out some apples, she began using the fruit for cooking, and was soon marketing the fruit. It is believed to have originally come from the seed of a French Crab apple.

Mouthwatering tartness. Bright green Granny with a pink blush has a crisp bite and a tangy flavor. Its tartness really comes through when baked and sautéed. Enjoy Granny Smiths out of hand or in a salad.

Granny Smith is a good choice. They have a zippy taste
and will provide a rich favor to your dessert. Other good
choices would be McIntosh or Golden Delicious. All of these
varieties stand up well for baking and cooking.

For a milder/sweeter apple taste, try the Jonathan apple

If your going to bake a pie try Granny Smith or MCINTOSH the are firmer. If its just a pastry covered baked apple then a good washington red is good

Fuji, Spies, or Granny smith if you like tart go with granny. Remember this rhyme "spies for pies"

Generally you'll want a very hard apple, then it will keep it's shape but become soft when baked.
