I don't see why you can't.
Although I don't know how it would taste.
Heard of baked apples?
Baked peaches?
Other baked fruit which is put on many folks' breakfast cereal?
Why not? Try it! You don't have anything to lose - except a watermelon.
IF I was doing it, here's what I would do:
1] Go to the dollar store and buy 2 aluminum pans - the kind you roast turkey in.
2] When you get home rinse them out.
3] Preheat the oven to about 300 degrees F.
4] Because of the watermelon's weight, you'll probably need both pans for support when you put the watermelon in and when you take it out of the oven.
5] Cut the melon in 1/2 - the long way. Put 1/2 in the double pan and put just enough water to coat the pan's bottom. [The watermelon should have PLENTY of moisture to add to the water in the pan's bottom.]
A] YOU DON'T want to make the pan too heavy. When you put the watermelon in or when you take it out, the double pan might collapse - making one big mess!!
6] Cook the watermelon about 30 minutes. Open the oven and see what it looks like.
7] If it looks OK to you, you can do one of the following:
A] CAREFULLY remove it from the oven. I DON'T recommend this.
B] OR since this is an experiment, you might want to turn off the oven, leaving the door open. This allows the watermelon to naturally cool and to come to room temperature. I think two (2) hours would be enough time to cool.
8] THEN take it out of the oven and put it on a table with a level surface. Scoop it out into a large bowl or slice it.
9] Thinking about this, it sounds pretty good. I think I would like to have vanilla ice cream with mine! AND a small wedge of the uncooked other half as a garnish on top - without the rind!!!
I THINK I'll make this and try this sometime this summer!!!! Thanks for the suggestion!

No, it would melt, you can however, carve a whole it it and put vodka in it, let the bottle train, in to the watermelon, cut in to chunks and serve or poke holes all over and put straws in the holes and sip away.

I don't know why you would want to bake it but I think it would explode or basically have the effect of 3 weeks of rot in 20 minutes.
I wouldn't try it, I think it would basically wilt.
