Just add cheese and melt it in the microwave. Its like a healthy version of mac and cheese. Just make sure you drain the water off the corn first.

drain corn from can and rinse with warm water. paste up one clove of garlic using olive oil and kosher salt. place a tablespoon of olive oil at the bottom of a skillet and add garlic. cook until fragrant, 2 minutes on medium-high. add 1/4 c. of white wine and boil down to half quantity. add the juice of half a lemon, fresh black pepper and a handful of parm. cheese (grated, not the stuff in the green can). add corn, remove from heat and mix well.

if you have liquid smoke, add a drop. the corn will taste like fresh roasted corn on the cob.

Mexican-Style Corn
INGREDIENTS:
3 tablespoons butter
2 cups fresh corn, canned or frozen thawed corn

dash black pepper
2 tablespoons green bell pepper, finely chopped
2 tablespoons pimiento, finely chopped
PREPARATION:
Melt butter; add corn, salt and pepper, and green bell pepper. Saute over low to medium-low heat for 20 to 25 minutes, stirring occasionally to keep corn from browning. Add pimiento and heat through.

I will drain most of the water off and put some butter and sugar (add to your own taste). It's a hit with the kids!
